Description
A simple and flavorful slow cooker recipe featuring tender chicken breasts or thighs cooked with cream cheese, pineapple rings, and ranch seasoning for a deliciously creamy and tangy dish perfect for an easy dinner.
Ingredients
Scale
Chicken and Seasoning
- 2 pounds boneless, skinless chicken breasts or thighs
- 1 oz dry ranch seasoning mix (1 packet)
Cream and Fruit
- 8 oz cream cheese, softened and cut into large cubes
- 20 oz pineapple rings in juice (juice reserved)
Instructions
- Prepare the Slow Cooker: Lightly grease the insert of a 4- to 6-quart slow cooker with oil or nonstick spray to prevent sticking and ensure easy cleanup.
- Layer the Chicken: Place the chicken breasts or thighs in a single layer at the bottom of the slow cooker.
- Add Seasoning: Evenly sprinkle the dry ranch seasoning mix over the chicken to infuse flavor throughout the dish.
- Add Pineapple: Drain the canned pineapple rings, reserving the juice. Lay the pineapple rings on top of the chicken. Pour 1/2 cup of the reserved pineapple juice over everything for added moisture and sweetness.
- Add Cream Cheese: Scatter the softened cream cheese cubes evenly over the pineapple and chicken.
- Cook the Dish: Cover the slow cooker and cook on LOW for 4 to 5 hours or on HIGH for 2 to 3 hours until the chicken is very tender and shreds easily.
- Shred Chicken: Carefully remove the pineapple rings and set aside. Use two forks to shred the chicken within the sauce to mix the flavors together.
- Adjust Sauce: Stir in more reserved pineapple juice if needed to loosen the sauce. Taste and adjust seasoning with additional salt or pepper if desired.
- Serve: Return the pineapple rings to the top, either whole or chopped. Serve the creamy chicken mixture hot over rice, noodles, or your preferred side dish.
Notes
- For a richer flavor, cream cheese can be softened at room temperature before adding.
- Chicken thighs can be substituted for breasts to add more moisture.
- Reserve extra pineapple juice to adjust the sauce consistency after cooking.
- Serve with rice, quinoa, or pasta to complement the creamy pineapple sauce.
- This dish pairs well with steamed vegetables or a fresh green salad.
