Description

A simple and flavorful recipe for 5 Ingredient Beef Enchiladas featuring lean ground beef, chunky salsa, rich enchilada sauce, and melted Mexican four-cheese blend wrapped in warm tortillas and baked to perfection.

Ingredients

Scale

Beef Filling

  • 1 pound lean ground beef
  • 1 cup chunky salsa
  • 1 (10-ounce) can red enchilada sauce

Tortillas and Cheese

  • 8 (8-inch) flour tortillas (corn tortillas can be used as a traditional alternative)
  • 1 (8-ounce) package Bordenยฎ Cheese Thick Cut Shredded Four Cheese Mexican (about 2 cups)

Instructions

  1. Preheat the oven: Preheat your oven to 350ยฐF (175ยฐC) and lightly spray a 9×13-inch baking dish with nonstick cooking spray to prevent sticking.
  2. Cook the beef: In a large skillet over medium-high heat, brown the lean ground beef until fully cooked. Drain excess fat, then reduce heat to medium-low and stir in the chunky salsa. Heat through and then remove from the heat.
  3. Prepare the baking dish: Pour about half of the red enchilada sauce into the bottom of the prepared baking dish, spreading it evenly.
  4. Assemble enchiladas: Warm the tortillas according to package instructions to make them pliable. Spoon about 1/4 cup of the beef mixture down the center of each tortilla, top with about 1 heaping tablespoon of shredded cheese, then tightly roll up each tortilla. Place them seam side down in the baking dish.
  5. Add sauce and cheese: Pour the remaining enchilada sauce over the rolled tortillas, then sprinkle the remaining shredded cheese evenly on top.
  6. Bake: Cover the dish tightly with aluminum foil and bake in the preheated oven for 30 to 35 minutes, until thoroughly heated and cheese is melted.

Notes

  • Flour tortillas provide a softer, more pliable texture, but corn tortillas offer a more traditional Mexican flavor.
  • For added spice, consider adding diced jalapeรฑos or a pinch of chili powder to the beef mixture.
  • Leftovers can be refrigerated for up to 3 days and reheated in the oven or microwave.
  • Drain the ground beef well to avoid excess grease in the dish.
  • If you prefer, top with chopped cilantro or sliced green onions before serving for added freshness.
