Ingredients
Scale
Meat and Vegetables
- 1 lb ground meat (grass-fed beef, lamb, turkey, or chicken)
- 1 tsp salt
- 1 tsp pepper
- Optional vegetables: peas, corn, mushrooms, spinach, parsnips (add according to preference)
Sweet Potato Topping
- 2 lbs sweet potatoes (chopped)
- 2 tbsp ghee or coconut oil
- 1/2 cup coconut milk (add gradually for desired consistency)
Instructions
- Preheat oven: Preheat your oven to 400°F (200°C) to prepare for baking the shepherd’s pie.
- Cook meat: Heat a skillet over medium heat and add the ground meat. Cook for about 6–8 minutes, stirring occasionally, until the meat is browned evenly.
- Add vegetables and seasoning: Stir in your choice of optional vegetables along with the salt and pepper. Let the mixture simmer for approximately 5 minutes to meld flavors and soften the vegetables.
- Boil sweet potatoes: Meanwhile, bring a pot of water to boil. Add the chopped sweet potatoes and cook for about 15 minutes until they are fork-tender. Drain thoroughly to remove excess water.
- Mash sweet potatoes: Mash the drained sweet potatoes and mix in the ghee or coconut oil along with the coconut milk, adding the milk gradually until you reach a creamy consistency.
- Assemble pie: Spread the cooked meat and vegetable filling evenly in the skillet. Dollop the mashed sweet potato mixture on top and spread it smoothly over the filling.
- Bake: Place the skillet in the preheated oven and bake the shepherd’s pie for 25–30 minutes, allowing the top to brown slightly and flavors to combine.
- Rest and serve: Remove the pie from the oven and let it rest for about 10 minutes before serving to ensure it sets well and is easy to portion.
Notes
- You can customize the vegetables based on seasonal availability or personal preference.
- Use grass-fed meat for a richer taste and higher nutrient content.
- Adjust the amount of coconut milk to achieve your desired mash texture—creamier or thicker.
- Leftover shepherd’s pie can be refrigerated for up to 3 days and reheated in the oven.
- For a dairy-free version, use coconut oil instead of ghee and full-fat coconut milk.
