Instructions
- Prepare Bread and Apples: Cut the brioche loaf into 1-inch cubes and let it sit out to dry slightly to help absorb the custard better. Peel and dice the apples into small pieces.
- Make the Custard: In a large bowl, whisk together the eggs, whole milk, granulated sugar, 1/4 cup brown sugar, vanilla extract, cinnamon, and nutmeg until fully combined and smooth.
- Assemble Layers: Grease a 9×13-inch baking dish. Layer half of the bread cubes evenly on the bottom, then sprinkle half of the apples over the bread. Sprinkle 1/4 cup brown sugar evenly over the apples. Repeat with the remaining bread cubes and apples, topping with the remaining brown sugar.
- Pour Custard and Add Butter: Pour the custard mixture evenly over the layered bread and apples. Press gently with a spatula to ensure the bread soaks up the custard. Drizzle the melted butter evenly on top.
- Refrigerate: Cover the baking dish with plastic wrap or foil and refrigerate for at least 2 hours, or preferably overnight. This soaking time allows the bread to fully absorb the custard and flavors.
- Bake: Preheat the oven to 350°F (175°C). Bake the casserole covered with foil for 30 minutes, then remove the foil and bake for an additional 20–25 minutes until the top is golden and slightly crisp.
