Description

This Apple Cinnamon French Toast Casserole is a warm, comforting breakfast dish perfect for gatherings or leisurely weekend mornings. Layers of brioche bread cubes and diced apples are soaked in a cinnamon-spiced custard, baked until golden and bubbly. Finished with a dusting of powdered sugar and a drizzle of maple syrup, this casserole combines the sweet aroma of apples and cinnamon with the rich creaminess of custard for a delicious and satisfying meal.

Ingredients

Scale

Custard

  • 6 large eggs
  • 2 cups whole milk
  • 1/4 cup granulated sugar
  • 1/4 cup brown sugar
  • 2 teaspoons vanilla extract
  • 2 teaspoons cinnamon
  • 1/4 teaspoon nutmeg

Bread & Fruit

  • 1 loaf (14 oz) brioche bread, cut into 1-inch cubes
  • 2 medium apples, peeled and diced

Topping & Serving

  • 1/4 cup brown sugar
  • 2 tablespoons butter, melted
  • Powdered sugar, for topping
  • Maple syrup, for serving

Instructions

  1. Prepare Bread and Apples: Cut the brioche loaf into 1-inch cubes and let it sit out to dry slightly to help absorb the custard better. Peel and dice the apples into small pieces.
  2. Make the Custard: In a large bowl, whisk together the eggs, whole milk, granulated sugar, 1/4 cup brown sugar, vanilla extract, cinnamon, and nutmeg until fully combined and smooth.
  3. Assemble Layers: Grease a 9×13-inch baking dish. Layer half of the bread cubes evenly on the bottom, then sprinkle half of the apples over the bread. Sprinkle 1/4 cup brown sugar evenly over the apples. Repeat with the remaining bread cubes and apples, topping with the remaining brown sugar.
  4. Pour Custard and Add Butter: Pour the custard mixture evenly over the layered bread and apples. Press gently with a spatula to ensure the bread soaks up the custard. Drizzle the melted butter evenly on top.
  5. Refrigerate: Cover the baking dish with plastic wrap or foil and refrigerate for at least 2 hours, or preferably overnight. This soaking time allows the bread to fully absorb the custard and flavors.
  6. Bake: Preheat the oven to 350°F (175°C). Bake the casserole covered with foil for 30 minutes, then remove the foil and bake for an additional 20–25 minutes until the top is golden and slightly crisp.
  7. Finish and Serve: Let the casserole cool for 5 to 10 minutes before serving. Dust the top with powdered sugar and drizzle generously with maple syrup to taste.

Notes

  • For best results, use brioche or another rich, slightly sweet bread to enhance flavor and texture.
  • Letting the bread cubes dry slightly before assembling helps them absorb the custard better without getting too soggy.
  • The casserole can be assembled the night before and refrigerated, making it a great make-ahead breakfast.
  • Feel free to use different apples for varied flavor and sweetness, such as Granny Smith for tartness or Honeycrisp for sweetness.
  • To keep the casserole warm before serving, cover loosely with foil and place in a low oven (about 200°F) or use a warming tray.
