Ingredients
Scale
Filling
- 3 medium apples, peeled, cored, and finely diced
- 2 tablespoons unsalted butter or coconut oil
- 1/4 cup brown sugar
- 1 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 1 tablespoon lemon juice
- 1 teaspoon vanilla extract
- 1 tablespoon cornstarch mixed with 1 tablespoon water (cornstarch slurry)
Rolls
- 12 rice paper wrappers
- Cooking spray or additional melted butter for brushing
- Optional: powdered sugar for dusting
Instructions
- Preheat and prepare baking sheet: Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper to prevent sticking.
- Cook the apple filling: In a medium skillet over medium heat, melt the butter and add the diced apples, brown sugar, cinnamon, nutmeg, and lemon juice. Cook, stirring occasionally, for 5 to 7 minutes until the apples begin to soften and release their juices. Stir in the vanilla extract, then add the cornstarch slurry and cook for another 1 to 2 minutes until the mixture thickens and becomes glossy. Remove from heat and let the filling cool slightly to prevent tearing the rice paper.
- Soften rice paper wrappers: Fill a shallow dish with warm water. Dip one rice paper wrapper into the water for about 10 seconds or until pliable but not overly soft. Lay it flat on a clean surface.
- Assemble the rolls: Spoon 2 to 3 tablespoons of the cooled apple filling near the center of the rice paper. Fold in the sides and roll tightly like a spring roll, making sure the seam is sealed and facing down. Place the roll seam side down on the prepared baking sheet. Repeat with remaining wrappers and filling.
- Prepare for baking: Lightly brush or spray the tops of the rolls with melted butter or cooking spray. This will help them become golden and crisp during baking.
- Bake the rolls: Place the baking sheet in the oven and bake for 18 to 22 minutes, turning the rolls halfway through to ensure even browning and crispness all around. The rolls should be golden and crisp when done.
- Cool and serve: Let the rolls cool slightly before serving. Optionally, dust with powdered sugar and serve with caramel sauce or vanilla yogurt for dipping.
Notes
- Use firm apples like Granny Smith or Honeycrisp for the best texture and balance of tartness.
- Ensure the apple filling is not too wet before rolling to prevent tearing the delicate rice paper wrappers.
- These rolls are best enjoyed fresh from the oven, but they can be reheated in an oven or air fryer to restore their crispiness.
- Serve with a side of caramel sauce or vanilla yogurt for added flavor contrast.
