Ingredients
Scale
Filling
- 1 lb. cooked, seasoned shredded chicken
- 1 ½ cups freshly grated Colby-Jack cheese
- 1 ½ cups freshly grated Pepper-Jack cheese
Tortillas
- 20 street taco corn tortillas
- Olive oil or olive oil cooking spray, for brushing
Toppings
- Salsa, to serve
- Diced tomato, to serve
- Guacamole, to serve
- Sour cream, to serve
- Cilantro, chopped, to garnish
Instructions
- Preheat Oven and Prepare Baking Sheets: Heat the oven to 425 degrees F (220 degrees C). Line two large baking sheets with parchment paper to prevent sticking and make cleanup easier.
- Arrange and Oil Tortillas: Lay the 20 street taco corn tortillas flat on the prepared baking sheets. Brush both sides of each tortilla lightly with olive oil or spray with olive oil cooking spray to ensure they crisp well in the oven.
- Add Filling and Cheese: Spoon approximately two tablespoons of the cooked, seasoned shredded chicken down the center of each tortilla. Top the chicken with two heaping tablespoons of freshly grated Colby-Jack and Pepper-Jack cheeses combined, ensuring even coverage.
- Melt Cheese and Fold Tacos: Bake the tacos in the preheated oven for about 2 minutes, or until the cheese has melted. Remove the baking sheets from the oven and carefully fold each tortilla in half over the filling, gently pressing them together to form a taco shape.
- Bake Until Crispy: Return the folded tacos to the oven and bake for an additional 12 to 14 minutes, or until the corn tortillas are golden brown and crispy on the outside.
- Serve: Remove the tacos from the oven and serve immediately with your choice of salsa, diced tomatoes, guacamole, sour cream, and a sprinkle of fresh cilantro for garnish. Enjoy your crispy, cheesy baked chicken tacos!
Notes
- For extra flavor, season your shredded chicken with taco seasoning or your preferred blend of Mexican spices before assembling.
- Using parchment paper helps prevent sticking and makes the cleanup process easier.
- You can substitute pepper-jack and colby-jack cheeses with other melting cheeses like Monterey Jack or cheddar if preferred.
- Make sure not to overfill the tortillas to prevent breaking when folding.
- These tacos are best enjoyed fresh out of the oven to maintain the crispy texture.
- Leftover tacos can be stored in an airtight container and reheated in the oven to keep them crispy.
