Instructions
- Prepare the Rice: If using freshly cooked rice, spread it out on a baking sheet and let it cool for about 30 minutes to dry out slightly, which prevents clumping during frying.
- Make the Bang Bang Sauce: In a small bowl, combine the mayonnaise and sweet chili sauce. Stir until smooth, then add sriracha according to your preferred spice level.
- Sauté the Protein: Heat 1 tablespoon of oil in a large skillet or wok over medium-high heat. Add the beef and cook, stirring occasionally, until browned and fully cooked, about 4 to 5 minutes. Remove the beef from the pan and set aside.
- Cook the Vegetables: In the same pan, add the remaining tablespoon of oil. Add peas, carrots, bell peppers, broccoli, snow peas, and corn if using. Stir-fry for 3 to 4 minutes until the vegetables are tender yet retain some crispness.
- Add the Rice: Push vegetables to the side of the pan and add a splash of oil if needed. Add the day-old jasmine rice, breaking up any clumps. Stir everything together and fry for 2 to 3 minutes to heat through and get a slight crispiness.
- Combine Everything: Return the cooked beef to the pan and add the Bang Bang sauce. Mix thoroughly to coat the rice, vegetables, and beef evenly. Cook for another 2 to 3 minutes, allowing the flavors to meld.
- Garnish and Serve: Remove from heat and garnish with chopped green onions. Serve hot with extra Bang Bang sauce on the side if desired.
