Description

A delicious and easy-to-make Berry Croissant Bake combining flaky croissants and fresh mixed berries soaked in a creamy, sweet custard, baked to golden perfection. Perfect for brunch or a sweet breakfast treat.

Ingredients

Scale

Croissant Base

  • 4 large croissants, broken into small pieces (use already baked croissants, not dough)

Berries

  • 1 cup sliced strawberries
  • ½ cup blueberries
  • ½ cup raspberries

Creamy Custard

  • 1 block (8 ounces) cream cheese, softened
  • 2/3 cup granulated sugar
  • 3/4 cup milk
  • 2 large eggs
  • 2 teaspoons vanilla extract

Instructions

  1. Preheat Oven: Preheat your oven to 350 degrees Fahrenheit. Lightly spray a 9 x 9-inch baking dish with cooking spray to prevent sticking.
  2. Assemble Croissant and Berries: Spread the broken croissant pieces evenly across the bottom of the prepared baking dish. Evenly distribute the sliced strawberries, blueberries, and raspberries over the croissants to create a colorful berry layer.
  3. Prepare Creamy Mixture: Using an electric mixer, beat the softened cream cheese until fluffy. Gradually add granulated sugar, milk, eggs, and vanilla extract while mixing continuously, blending all ingredients until the mixture is smooth and well combined.
  4. Combine and Chill: Pour the creamy custard mixture evenly over the croissants and berries in the baking dish. Cover the dish and refrigerate for a minimum of 15 minutes or up to 14 hours to allow the croissants to soak and the flavors to meld.
  5. Bake: Remove the cover and place the dish in the preheated oven. Bake for 35 to 40 minutes or until the custard is set, and the top is golden brown.
  6. Serve: Serve the berry croissant bake warm. Optionally, dust with powdered sugar or drizzle with syrup to enhance sweetness. Enjoy your delightful breakfast or brunch treat!

Notes

  • Be sure to use baked croissants; raw croissant dough will not work for this recipe.
  • Chilling the mixture before baking helps the custard better soak the croissant pieces and improves texture.
  • Fresh berries can be substituted with frozen berries if fresh are unavailable; just thaw and drain excess moisture before using.
  • For a dairy-free version, substitute cream cheese and milk with vegan alternatives, but baking time and texture might vary.
  • This recipe can easily be doubled for a larger crowd using a bigger baking dish.
