Description
Enjoy a hearty and flavorful breakfast with Biscuits and Chorizo Gravy, combining fluffy homemade or store-bought biscuits with a rich, spicy pork chorizo gravy infused with sautéed onions and creamy milk for a comforting morning meal.
Ingredients
Scale
Biscuits
- 8 biscuits (store-bought or homemade)
Chorizo Gravy
- 12 oz Cacique pork chorizo (spicy flavor and richness)
- 1/2 medium onion (white or yellow), finely diced
- 3 tablespoons all-purpose flour (can swap for gluten-free flour)
- 2 1/2 cups whole milk (non-dairy milk works well)
Instructions
- Prepare Biscuits: If using store-bought biscuits, bake according to package instructions. If making homemade biscuits, roll out your favorite dough and bake until golden and fluffy.
- Cook Chorizo: Heat a large sauté pan over medium-high heat and brown the chorizo, breaking it apart with a spatula. Cook for about 5-7 minutes until fully cooked and sizzling.
- Sauté Onions: Add the finely diced onion to the chorizo in the pan and cook for about 7 minutes until the onions soften and become translucent.
- Add Flour: Sprinkle the all-purpose flour over the chorizo and onion mixture. Stir continuously and cook for about 1 minute until the flour turns a light golden color, helping to thicken the gravy.
- Simmer Gravy: Reduce the heat to medium-low and gradually stir in the milk. Let the mixture simmer for 5-7 minutes, stirring occasionally until the gravy thickens to your desired consistency.
- Serve: Spoon the chorizo gravy generously over the warm, fluffy biscuits. Season with salt and pepper to taste and enjoy immediately.
Notes
- You can use gluten-free flour to make the gravy gluten-free.
- Non-dairy milk such as almond or oat milk can be used as a substitute for whole milk.
- Adjust the amount of chorizo or spice based on your preference for heat and richness.
- For a lighter version, consider baking the biscuits using a low-fat recipe.
- To keep the gravy smooth, stir constantly when adding flour and milk.
