Description

A creamy and comforting Cheesy Garlic Chicken and Broccoli Pasta dish that combines tender chicken, fresh broccoli, and a rich cheesy sauce. Ready in just 30 minutes, this easy stovetop recipe is perfect for a satisfying weeknight dinner.

Ingredients

Scale

Pasta and Chicken

  • 250 g pasta (penne, rotini, or fettuccine)
  • 2 tbsp olive oil
  • 2 chicken breasts, cubed
  • 1 tsp onion powder
  • ½ tsp black pepper

Vegetables

  • 3 cloves garlic, minced
  • 1 ½ cups broccoli florets

Sauce

  • 1 cup heavy cream
  • 1 cup shredded cheddar cheese
  • ½ cup grated Parmesan cheese
  • ½ cup chicken broth
  • 1 tbsp butter

Instructions

  1. Cook the pasta: Bring a large pot of salted water to a boil and cook the pasta according to package directions until al dente. Drain the pasta and set it aside for later.
  2. Sauté the chicken: Heat olive oil in a large pan over medium heat. Add the cubed chicken breasts, season with onion powder and black pepper, and cook until the chicken pieces are golden brown and cooked through. Remove the chicken from the pan and set aside.
  3. Cook the broccoli and garlic: In the same pan, add the butter and let it melt. Then add the minced garlic and broccoli florets, sautéing them together for about 2 minutes until the garlic is fragrant and broccoli is bright green but still crisp.
  4. Make the sauce: Pour in the heavy cream and chicken broth, stirring to combine. Bring the mixture to a gentle simmer and cook for a few minutes until the sauce thickens slightly.
  5. Add the cheese: Stir in the shredded cheddar cheese and grated Parmesan cheese, continuing to stir until all the cheese has melted and the sauce is smooth and creamy.
  6. Combine: Return the cooked chicken and pasta to the pan. Toss everything together well to ensure the pasta and chicken are evenly coated with the cheesy garlic sauce.
  7. Serve: Serve the cheesy garlic chicken and broccoli pasta warm immediately and enjoy your comforting meal.

Notes

  • Use freshly grated Parmesan cheese for the best flavor and melting quality.
  • For a lower-fat version, substitute heavy cream with half-and-half or a lighter cream alternative.
  • Add red pepper flakes for a spicy kick if desired.
  • Cook pasta al dente to prevent it from becoming mushy in the sauce.
  • Leftovers can be stored in an airtight container in the fridge for up to 3 days.
