Chicken Marinade

- 12 small corn tortillas

Instructions
- Prepare the Marinade: In a medium bowl, whisk together olive oil, fresh lime juice, minced garlic, ground cumin, chili powder, salt, and black pepper. Add the boneless, skinless chicken breasts to the marinade, ensuring they are fully coated. Cover and let marinate for at least 30 minutes to infuse the flavors.
- Cook the Chicken: Heat a large skillet over medium-high heat. Remove chicken from marinade and cook in the hot skillet for about 5-6 minutes on each side, or until the internal temperature reaches 165ยฐF (74ยฐC) and the chicken is cooked through and slightly charred.
- Rest and Slice Chicken: After cooking, transfer the chicken to a cutting board and let it rest for 5 minutes. Then, slice the chicken thinly against the grain to ensure tenderness.
- Warm Tortillas: Using the same skillet, warm each corn tortilla for about 30 seconds on each side until pliable and slightly toasted.
- Assemble Tacos: Place sliced chicken onto each warmed tortilla. Top with fresh diced onion and chopped cilantro. Serve immediately with lime wedges on the side for an extra burst of citrus flavor.
Notes
- For extra heat, add a dash of hot sauce or sliced jalapeรฑos to the tacos.
- Make sure not to overcook the chicken to keep it juicy and tender.
- You can substitute corn tortillas with flour tortillas if preferred.
