  2. Shape the truffles: Remove the chilled mixture from the fridge. Scoop about 1 tablespoon of the coconut mixture and flatten it in your palm. Place a dried maraschino cherry in the center, then carefully wrap the coconut mixture around the cherry to form a smooth ball. Repeat this process to make a total of 24 truffles.
  3. Chill the formed truffles: Arrange the shaped truffles on a parchment-lined tray. Refrigerate for 1 hour or freeze for 30 minutes until they are firm to the touch.
  4. Melt the chocolate coating: In a microwave-safe bowl, melt the chocolate chips together with coconut oil in 30-second intervals, stirring well between each until the chocolate is completely smooth and glossy.
