Instructions

  2. Arrange Crackers: Place one Ritz cracker into each lined muffin cup, creating the cookie base for the toffee topping.
  3. Make Toffee Sauce: In a medium saucepan over medium-low heat, combine 1 cup of butter and 1 cup of packed brown sugar. Stir occasionally as the mixture comes to a rolling boil. Maintain the boil and cook for 3 minutes until it bubbles vigorously and turns an amber color, indicating proper caramelization.
  4. Pour Toffee over Crackers: Remove the pan from heat. Carefully ladle approximately 2 teaspoons of the hot toffee mixture over each Ritz cracker, ensuring full coverage.
  5. Bake the Toffee: Place the muffin tin in the preheated oven and bake for 3-5 minutes, or until the toffee starts bubbling, indicating it’s fully cooked and set.
  6. Add and Spread Chocolate: Remove the muffin tin from the oven. Immediately sprinkle 2 cups of semi-sweet chocolate chips evenly over the hot toffee-coated crackers. Let them sit for 1-2 minutes to soften, then use a spatula to spread the melted chocolate evenly. If the chocolate isn’t melting sufficiently, return the tin to the oven for 1-2 minutes and then spread.
