Description

Delight in a breakfast classic with a twist—Cinnamon Roll Pancakes. Fluffy pancakes swirled with a rich cinnamon-sugar mixture and topped with a smooth vanilla glaze, these pancakes combine the best flavors of cinnamon rolls and traditional pancakes for a sweet, comforting start to your day.

Ingredients

Scale

Pancake Batter

  • 1 1/2 cups all-purpose flour
  • 2 tablespoons granulated sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 large egg
  • 1 cup milk
  • 2 tablespoons melted butter

Cinnamon Swirl

  • 1/4 cup brown sugar
  • 1 tablespoon ground cinnamon
  • 2 tablespoons melted butter

Vanilla Glaze

  • 1/2 cup powdered sugar
  • 2 tablespoons milk
  • 1/2 teaspoon vanilla extract

Instructions

  1. Prepare Cinnamon Swirl: In a small bowl, thoroughly mix the brown sugar, ground cinnamon, and 2 tablespoons melted butter until well combined. Transfer the mixture into a small plastic bag and snip off a tiny corner to create a piping bag for easy application. Set aside.
  2. Mix Pancake Batter: In a large bowl, whisk together the all-purpose flour, granulated sugar, baking powder, and salt to combine the dry ingredients. In a separate bowl, beat the egg with the milk and 2 tablespoons melted butter. Pour the wet ingredients into the dry ingredients and gently stir until just combined, taking care not to overmix to keep the pancakes light and fluffy.
  3. Cook Pancakes: Heat a non-stick skillet or griddle over medium heat. For each pancake, pour approximately 1/4 cup of batter onto the heated surface. Immediately pipe a swirl of the prepared cinnamon mixture onto the surface of each pancake to create the signature cinnamon roll effect.
  4. Flip and Cook: Cook the pancakes until bubbles form on the surface, indicating the underside is cooked. Carefully flip them over and cook for another 1-2 minutes or until the other side is golden brown. Continue this process with the remaining batter and cinnamon swirl mixture.
  5. Make the Glaze: In a small bowl, whisk together the powdered sugar, milk, and vanilla extract until the glaze is smooth and free of lumps. Adjust consistency by adding a little more milk if needed for drizzling.
  6. Serve: Drizzle the warm pancakes generously with the vanilla glaze and serve immediately for the best flavor and texture experience.

Notes

  • Use a non-stick skillet or well-seasoned griddle to prevent sticking and achieve evenly cooked pancakes.
  • Do not overmix the batter; lumps are okay and help maintain fluffy pancakes.
  • The cinnamon swirl can be prepared ahead and stored in the refrigerator until ready to use.
  • If you prefer a thicker glaze, reduce the amount of milk or add more powdered sugar.
  • Serve with butter or additional syrup for extra indulgence if desired.
