Description

This Coffee Cake Baked Oatmeal is a delightful breakfast treat that combines the comforting flavors of a classic coffee cake with the hearty texture of baked oatmeal. Featuring a cinnamon-spiced oat base topped with a crumbly streusel, it’s sweetened naturally with maple syrup and baked to a golden perfection. Easy to prepare and perfect for a cozy morning, this recipe serves six and offers a satisfying start to your day.

Ingredients

Scale

Oatmeal Base

  • 2 cups rolled oats
  • 1 teaspoon baking powder
  • 1 teaspoon cinnamon
  • 1/4 teaspoon salt
  • 1 cup milk
  • 1/4 cup maple syrup
  • 1 teaspoon vanilla extract
  • 1 egg
  • 2 tablespoons melted butter

Streusel Topping

  • 1/4 cup flour
  • 2 tablespoons brown sugar
  • 2 tablespoons melted butter
  • 1/2 teaspoon cinnamon

Instructions

  1. Preheat and prepare the baking dish. Preheat your oven to 350°F (175°C) and grease a baking dish to prevent sticking.
  2. Combine dry ingredients for the oatmeal base. In a bowl, mix together the rolled oats, baking powder, cinnamon, and salt.
  3. Whisk the wet ingredients. In a separate bowl, whisk the milk, maple syrup, vanilla extract, egg, and melted butter until well combined.
  4. Mix wet and dry ingredients. Pour the wet ingredient mixture into the bowl with dry ingredients and stir until fully combined. Then, pour this oatmeal mixture into the prepared baking dish, spreading it evenly.
  5. Prepare the streusel topping. In another small bowl, blend the flour, brown sugar, melted butter, and cinnamon until crumbly. Sprinkle this mixture evenly over the oatmeal base.
  6. Bake the oatmeal. Place the baking dish in the preheated oven and bake for 30-35 minutes, or until the oatmeal is set and the topping is a golden brown color.
  7. Serve warm. Remove from the oven and let cool slightly before serving warm for the best flavor and texture.

Notes

  • Use rolled oats for the best texture; quick oats will make the bake too mushy.
  • Maple syrup adds a natural sweetness; you can substitute with honey if preferred.
  • Make sure the butter is melted but not hot when mixing to avoid cooking the egg.
  • Feel free to add nuts or dried fruit to the oatmeal mixture for added texture and flavor.
  • Store leftovers covered in the refrigerator for up to 3 days and reheat before serving.
