  • 14 ounce package flake-style imitation crab (flaked apart)
  • 5 to 6 limes (divided, depending on size)
  • ⅓ cup fresh cilantro (stemmed and minced)
  • 2 tablespoons extra virgin olive oil
  • 1 ½ teaspoon kosher salt
  • Black pepper (to taste)


Instructions

  1. Prepare the onions: Place the sliced onions in a large bowl with ¾ teaspoon kosher salt. Press the salt into the onions evenly with your hands. Add just enough warm water to cover the onions along with the juice of ½ lime. Let the onions soak for at least 15 to 20 minutes to mellow their flavor. Drain and rinse them under cold water.
  2. Mix the salad: While the onions are soaking, prepare the bell peppers and cilantro. In a large bowl, combine the drained and rinsed onions, flaked imitation crab, bell peppers, juice of 3 to 4 more limes, olive oil, minced cilantro, ¾ teaspoon kosher salt, and black pepper to taste.
