- 1 medium red or yellow onion (peeled and sliced into thin strips)
- 3 bell peppers (cut into ¼ inch thick strips, then cut in half; use a combination of red, yellow, and orange)
- 14 ounce package flake-style imitation crab (flaked apart)
- 5 to 6 limes (divided, depending on size)
- ⅓ cup fresh cilantro (stemmed and minced)
- 2 tablespoons extra virgin olive oil
- 1 ½ teaspoon kosher salt
- Black pepper (to taste)
Instructions
- Prepare the onions: Place the sliced onions in a large bowl with ¾ teaspoon kosher salt. Press the salt into the onions evenly with your hands. Add just enough warm water to cover the onions along with the juice of ½ lime. Let the onions soak for at least 15 to 20 minutes to mellow their flavor. Drain and rinse them under cold water.
- Mix the salad: While the onions are soaking, prepare the bell peppers and cilantro. In a large bowl, combine the drained and rinsed onions, flaked imitation crab, bell peppers, juice of 3 to 4 more limes, olive oil, minced cilantro, ¾ teaspoon kosher salt, and black pepper to taste. Mix everything well until evenly combined.
- Marinate: Cover the salad and let it marinate for a few hours or overnight in the refrigerator. This allows the flavors to meld and develop fully.
- Serve: Taste and adjust salt and seasoning as needed. Serve the crab salad chilled alongside chips or tostones for a delicious and colorful dish.
