Ingredients
Scale
Pork Chops
- 4-6 pork chops
- Garlic herb seasoning to taste (or salt, pepper, dried herbs & garlic powder)
Sauce
- 1 tablespoon olive oil
- 1 (8-oz) package sliced mushrooms
- 3 cloves garlic, peeled and crushed
- 2 tablespoons butter
- 1 tablespoon flour
- 1 cup chicken broth
- ½ cup heavy cream
- 1 teaspoon cornstarch
- Fresh chopped parsley (optional, for serving)
Instructions
- Season pork chops: Lightly pound the pork chops for extra tenderness. Generously season them with garlic herb seasoning or your choice of salt, pepper, dried herbs, and garlic powder.
- Sear pork chops: Heat a large skillet over medium-high heat. Once hot, add olive oil and sear the pork chops until golden brown on the outside and just cooked through on the inside. Remove from skillet and set aside.
- Sauté the mushrooms: In the same skillet, add sliced mushrooms and sauté over medium to medium-high heat until golden and tender, about 6 minutes. Stir in crushed garlic and cook for 2-3 minutes until fragrant and lightly golden.
- Make the roux: Reduce heat to medium-low, add butter to the skillet and stir until melted. Sprinkle flour over the mushrooms and stir continuously until the flour is fully absorbed and no dry flour remains.
- Start the sauce: Gradually pour in chicken broth while stirring to prevent lumps. Simmer the mixture over medium to medium-high heat for 2-3 minutes until the sauce slightly thickens.
- Add cream: Lower heat to low. In a separate bowl, whisk together heavy cream and cornstarch until smooth. Stir this mixture into the mushroom sauce until fully combined and smooth.
- Warm through: Nestle the pork chops back into the sauce and gently simmer on the stove until everything is heated through. Spoon the sauce over the pork chops and garnish with cracked black pepper and fresh chopped parsley if desired before serving.
Notes
- Lightly pounding pork chops helps make them more tender and ensures even cooking.
- A large skillet is essential to sear the pork chops properly and to have enough space to sauté mushrooms and prepare the sauce.
- Cooking mushrooms until golden enhances their flavor and texture in the creamy sauce.
- Simmering pork chops gently in the sauce finishes the cooking and allows the flavors to meld without drying out the meat.
