Ingredients

Scale

Main Ingredients

  • 2 packets instant ramen noodles
  • Water or low-sodium chicken or vegetable broth (about 4 cups)
  • 1 cup whole milk (or oat milk, soy milk, or almond milk)
  • 4 ounces cream cheese (full-fat or reduced-fat)
  • 2 cloves garlic, freshly minced
  • 1 tablespoon grated ginger
  • 8 ounces ground beef (or thinly sliced beef, cooked shredded chicken, or firm tofu)
  • 2 tablespoons low-sodium soy sauce
  • 1 tablespoon white (shiro) miso paste (optional)
  • 1 tablespoon unsalted butter

Toppings (Optional)

  • 4 soft-boiled eggs
  • Thinly sliced scallions (green onions), about 1/4 cup
  • Chili oil or chili crisp, to taste
  • Fresh spinach or corn, about 1/2 cup
  • Toasted sesame seeds, 1 tablespoon

Instructions

  1. Prepare Your Aromatics and Beef: Mince the garlic and grate the ginger. If using ground beef, break it into small pieces; if using thinly sliced beef, have it ready for quick searing.
  2. Cook the Beef: In a medium pot or deep skillet, melt about half a tablespoon of butter over medium-high heat. Add the ground beef and cook until browned and fully cooked, breaking it apart as it cooks. If using thinly sliced beef, sear quickly until just browned, then remove and set aside.
  3. Sauté the Aromatics: Reduce the heat to medium, add the remaining butter, then toss in the minced garlic and grated ginger. Sauté for 1-2 minutes until fragrant but not burnt.
  4. Build the Creamy Broth: Pour in your chosen liquid base (water or broth) and bring it to a gentle simmer. Whisk in the cream cheese until fully melted and smooth. Stir in the milk, ramen seasoning packets from the noodle packages, low-sodium soy sauce, and if using, the miso paste. Taste and adjust seasonings as needed.
  5. Cook the Noodles: Add the instant ramen noodles directly into the simmering broth. Cook according to package directions, usually about 2-3 minutes, stirring occasionally to separate the noodles.
  6. Assemble and Serve: Once noodles are cooked, divide the ramen and broth evenly into serving bowls. If using thinly sliced beef, add it back on top of the noodles now.
  7. Add Your Favorite Toppings: Garnish your ramen bowls with optional toppings such as soft-boiled eggs, thinly sliced scallions, fresh spinach or corn, a drizzle of chili oil or chili crisp, and a sprinkle of toasted sesame seeds. Serve immediately for best flavor and texture.

Notes

  • You can substitute ground beef with thinly sliced beef, shredded chicken, or firm tofu for a vegetarian option.
  • Adjust the creaminess by using full-fat or lighter cream cheese and choice of milk alternative.
  • If you prefer a spicier ramen, add more chili oil or chili crisp to your taste.
  • Make sure not to overcook the noodles to maintain a nice texture.
  • Miso paste adds an extra layer of umami but can be omitted if unavailable.
  • Use low-sodium broth and soy sauce to control the salt level in the dish.
