Ingredients
Scale
For the Chicken:
- 2 large chicken breasts, sliced into strips
- 1 cup buttermilk (or milk + 1 tsp lemon juice)
- 1 cup all-purpose flour
- 1/2 cup breadcrumbs (panko for extra crunch)
- 1 tsp paprika
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
- 1/2 tsp salt
- 1/2 tsp black pepper
- Oil for frying
For the Wraps:
- 4 large flour tortillas
- 8 strips crispy cooked bacon
- 1 cup shredded cheddar or Colby Jack cheese
- 1 cup shredded lettuce
- 1–2 Roma tomatoes, diced
- 1/2 cup ranch dressing
Instructions
- Marinate the Chicken: Soak the chicken strips in buttermilk for at least 15 minutes or up to 2 hours in the refrigerator. This tenderizes the chicken and helps keep it juicy when cooked.
- Bread & Fry: In a shallow bowl, combine flour, breadcrumbs, paprika, garlic powder, onion powder, salt, and black pepper. Remove the chicken from the buttermilk, dredge the strips thoroughly in the flour mixture, ensuring an even coating. Heat oil to 350°F (175°C) in a skillet and fry the chicken strips for 4–5 minutes per side until golden brown and cooked through with an internal temperature of 165°F (74°C). Drain on paper towels. For a healthier alternative, air fry at 400°F for 10–12 minutes, flipping halfway through.
- Assemble the Wraps: Warm the tortillas slightly to make them flexible. Spread ranch dressing down the center of each tortilla. Layer with crispy chicken strips, crispy bacon, shredded cheese, shredded lettuce, and diced tomatoes.
- Wrap & Crisp: Fold in the sides of the tortilla and roll tightly to enclose the filling. Place the wrap seam-side down into a skillet over medium heat. Cook for 2–3 minutes on each side until the tortilla is golden brown and lightly crispy, and the cheese starts to melt.
Notes
- For extra creaminess, add sliced avocado inside the wrap.
- For a spicy twist, toss cooked chicken strips in buffalo sauce before assembling.
- Use freshly grated cheese to achieve better melting and flavor.
- Let the wraps rest for 2 minutes before slicing to maintain neat and clean cuts.
