- Mix Cream Cheese Filling: In a bowl, beat together the cream cheese, granulated sugar, and vanilla extract until smooth and creamy, ensuring no lumps remain.
- Assemble Filling: Spoon about 1 tablespoon of the cream cheese filling into the center of each puff pastry square, keeping it inside the scored border.
- Cook Blueberry Topping: In a saucepan, combine the blueberries, 2 tablespoons water, and lemon juice. Simmer gently for 3–5 minutes until the blueberries soften and release their juices.
- Thicken Blueberries: Stir in the cornstarch and continue cooking for another minute until the topping thickens. Remove from heat and allow it to cool slightly to avoid melting the cream cheese filling when added.
- Add Blueberry Topping: Spoon about 1 tablespoon of the blueberry topping over the cream cheese on each pastry square, distributing evenly.
- Apply Egg Wash: Whisk together the egg and 1 teaspoon water to make an egg wash, then brush this over the puff pastry borders to give the danish a shiny, golden finish when baked.
