Instructions
- Preheat and Prepare Baking Sheet: Preheat the oven to 400°F (200°C) and lightly oil a baking sheet to prevent sticking and help with crisping the tortillas later.
- Cook Tater Tots: Cook the frozen tater tots according to the package instructions until crispy and golden brown, about 20 minutes. Once done, remove them and set aside to cool slightly.
- Cook Sausage: Heat olive oil in a skillet over medium-high heat. Add the breakfast sausage and cook until browned, about 3-5 minutes, breaking it apart as it cooks.
- Prepare Eggs: In a bowl, whisk the eggs thoroughly, then pour them into the skillet with the cooked sausage. Stir and cook until the eggs are just set, then add half and half to the skillet and continue stirring until the mixture thickens. Season with kosher salt and freshly ground black pepper to taste.
- Assemble Burritos: Lay the tortillas flat. Spread a layer of refried beans down the center of each tortilla, then layer with the cooked tater tots, sausage and egg mixture, shredded cheddar and Monterey Jack cheeses, diced Roma tomatoes, and chopped cilantro.
