Ingredients
Scale
Potatoes and Oil
- 1 pound Frozen Tater Tots (These add a satisfying crunch; feel free to swap with diced roasted potatoes.)
- 1 tablespoon Olive Oil (Can substitute with any neutral oil.)
Meat and Eggs
- 1 pound Breakfast Sausage (Consider using turkey sausage for a lighter option.)
- 6 large Eggs
- 1/2 cup Half and Half (Can substitute with equal parts milk and cream or just milk.)
Seasonings
- to taste Kosher Salt
- to taste Freshly Ground Black Pepper
Beans and Tortillas
- 1 can Refried Beans (Can substitute with black beans for a different flavor.)
- 4 large Flour Tortillas (Whole wheat tortillas are a nutritious substitute.)
Cheese and Vegetables
- 1 cup Shredded Cheddar Cheese
- 1 cup Shredded Monterey Jack Cheese
- 1 cup Roma Tomatoes (Can leave out for a simpler burrito.)
- 1/4 cup Chopped Fresh Cilantro Leaves (Can substitute with green onions.)
Instructions
- Preheat the Oven: Preheat your oven to 400°F (200°C) and lightly oil a baking sheet to prevent sticking.
- Cook Tater Tots: Arrange frozen tater tots on the prepared baking sheet and cook according to package instructions until they are crispy and golden brown, approximately 20 minutes. Once done, set them aside to cool.
- Cook Sausage: Heat olive oil in a skillet over medium-high heat. Add the breakfast sausage and cook, breaking it up occasionally, until browned and cooked through, about 3-5 minutes.
- Prepare Eggs: In a bowl, whisk the eggs thoroughly. Pour the eggs into the skillet with the cooked sausage and cook gently until the eggs are just set. Stir in the half and half, cooking until the mixture thickens slightly. Season with kosher salt and freshly ground black pepper to taste.
- Assemble Burritos: Lay each flour tortilla flat and spread a layer of refried beans down the center. Layer with crispy tater tots, browned sausage and egg mixture, shredded cheddar and Monterey Jack cheeses, diced Roma tomatoes, and chopped cilantro.
- Fold Burritos: Fold in the sides of each tortilla and roll up burrito-style, tucking in the sides to secure the filling. Place each burrito seam-side down on the prepared baking sheet.
- Bake Burritos: Bake the assembled burritos in the preheated oven for 12-15 minutes, allowing them to heat through and the tortillas to become slightly golden and crispy.
- Serve or Freeze: Serve the burritos immediately for a hot breakfast or let them cool completely before transferring to an airtight container for freezing. They can be reheated later for a quick and satisfying meal.
Notes
- You can substitute diced roasted potatoes if you prefer over tater tots for a different texture.
- For a lighter version, turkey sausage can be used instead of regular breakfast sausage.
- Whole wheat tortillas add extra fiber and nutrients if desired.
- If you want a vegetarian option, replace the sausage with plant-based sausage alternatives.
- Refried beans can be swapped with black beans for a different flavor profile.
- Reheat frozen burritos in the oven or microwave until warmed through.
- Omitting the tomatoes will simplify the burrito if preferred.
