Instructions
- Preheat Oven and Prepare Dish: Preheat your oven to 350°F (175°C) and lightly grease a 9×13 inch baking dish to prevent sticking.
- Cook Ground Beef and Onions: In a large skillet over medium heat, cook 1 lb of ground beef with 1 cup chopped onion until the beef is fully browned and onions are softened. Drain any excess grease from the skillet.
- Add Seasoning and Tomatoes: Stir in 1 oz taco seasoning and 10 oz of drained diced tomatoes with green chilies into the browned beef mixture. Allow it to simmer for 3 to 4 minutes until the mixture thickens slightly, enhancing flavor blend.
- Mix in Beans, Corn, and Sour Cream: Add 15 oz of drained and rinsed black beans, 1 cup of corn kernels, and 1 cup of sour cream to the skillet. Stir everything together until fully combined and creamy.
- Layer Doritos: Spread half of the 9 oz crushed nacho cheese Doritos evenly on the bottom of the prepared baking dish to create the first crunchy layer.
- Add Beef Mixture and Cheese: Spoon half of the beef and bean mixture evenly over the Doritos layer, then sprinkle 1 cup shredded cheddar cheese over the top for a cheesy finish.
- Repeat Layers: Repeat the layering with the remaining crushed Doritos, then the remaining beef mixture, and top with the last 1 cup of shredded cheddar cheese.
