Instructions
- Mix Ingredients: In a large mixing bowl, combine the warm water and active sourdough starter until well mixed. Gradually stir in the bread flour, cocoa powder, brown sugar, and salt until no dry flour remains. Let the mixture rest for 30 minutes to allow the flour to hydrate fully.
- Knead Dough: Add the chocolate chips to the dough and knead it on a floured surface for about 10 minutes until the dough becomes smooth and elastic, evenly incorporating the chocolate chips throughout.
- First Rise: Place the kneaded dough back into the bowl and cover it with a damp cloth. Let it rise for 1 to 2 hours, or until it has doubled in size, developing more flavor and structure.
