Description

This Easy Egg Hashbrown Casserole is a hearty and comforting breakfast dish featuring crispy hash brown potatoes, savory pork sausage, eggs, and melted cheddar cheese baked to perfection with flavorful seasonings. Perfect for family brunches or meal prep, this casserole combines simple ingredients for a satisfying start to your day.

Ingredients

Scale

Potatoes & Meat

  • 2 pounds thawed frozen hash brown potatoes
  • 1 pound pork sausage

Vegetables & Seasonings

  • 1 small diced onion
  • 1/2 teaspoon onion powder
  • 1/8 teaspoon garlic powder
  • Salt to taste
  • Black pepper to taste

Egg Mixture

  • 5 eggs
  • 1/2 cup milk

Cheese

  • 12 ounces shredded cheddar cheese

Instructions

  1. Preheat the Oven: Preheat your oven to 350°F (175°C) to ensure it reaches the right temperature by the time your casserole is assembled.
  2. Cook the Sausage: In a large skillet over medium heat, cook the pork sausage until browned and fully cooked, breaking it apart with a spoon for even crumbling. Remove excess grease if necessary.
  3. Sauté the Onion: Add the diced onion to the skillet with the cooked sausage. Cook until the onion is soft and translucent, about 3-5 minutes, to develop flavor.
  4. Combine Ingredients: In a large mixing bowl, whisk together the eggs, milk, onion powder, garlic powder, salt, and black pepper until well combined. Stir in the thawed hash browns, cooked sausage and onions, and half of the shredded cheddar cheese.
  5. Assemble the Casserole: Transfer the mixture into a greased 9×13 inch baking dish. Spread evenly and sprinkle the remaining shredded cheddar cheese evenly on top.
  6. Bake: Place the dish in the preheated oven and bake uncovered for 45-50 minutes, or until the eggs are set and the cheese is bubbly and golden brown on top.
  7. Rest and Serve: Allow the casserole to rest for 5-10 minutes after removing it from the oven to help it set before serving warm.

Notes

  • Make sure to thaw the hash browns completely and drain any excess moisture to avoid a soggy casserole.
  • You can substitute pork sausage with ground turkey or a vegetarian sausage for a healthier or vegetarian option.
  • Feel free to add chopped bell peppers or mushrooms to the onion saute for extra veggies.
  • Leftovers can be refrigerated for up to 3 days and reheated in the oven or microwave.
  • For a creamier texture, add a dollop of sour cream or cream cheese into the egg mixture.
