Instructions

  1. Heat Olive Oil and Sauté Spices: Heat the tablespoon of olive oil in a large pot over medium heat. Add minced garlic, paprika, dried rosemary, dried thyme, and chili flakes. Sauté the mixture for about 2 minutes until the garlic is fragrant and spices are well combined.
  2. Add Chickpeas and Potato: Add the drained and rinsed chickpeas along with the diced potato pieces to the pot. Stir well to evenly coat the chickpeas and potato with the garlic and spices.
  3. Add Broth and Simmer: Pour in the 2 cups of low-sodium vegetable broth. Bring the soup to a gentle boil. Once boiling, reduce the heat to low and let the soup simmer uncovered for 30 minutes to allow the potatoes to soften and flavors to meld.
