Scale
Sausage Gravy Ingredients
- 1 pound bulk ground pork breakfast sausage (mild or hot)
- 1/4 cup all-purpose flour
- 2 to 2 1/2 cups milk
- Salt, to taste
- Black pepper, to taste
Instructions
- Brown the sausage: In a large skillet over medium-high heat, crumble and cook the ground pork breakfast sausage until it is well browned. Make sure to allow it to develop a nice brown color, rather than just cooking it through, to enhance the flavor. Do not drain off the grease, as it will add richness to the gravy.
- Add the flour: Sprinkle 1/4 cup of all-purpose flour over the browned sausage. Stir constantly and cook the mixture for 2 to 3 minutes to cook out the raw flour taste and create a roux that will thicken the gravy.
- Incorporate the milk: Gradually pour in 2 to 2 1/2 cups of milk, stirring well after each addition to prevent lumps. Reduce the heat to a simmer and continue to stir frequently as the gravy thickens. Add salt and plenty of freshly ground black pepper to taste. Adjust milk quantity to reach the desired thickness. Serve the gravy immediately over warm biscuits or your preferred dish.
Notes
- For thicker gravy, use closer to 2 cups of milk; for thinner gravy, add more.
- Do not drain the sausage grease โ it adds flavor and richness to the gravy.
- Use mild or hot bulk sausage depending on your heat preference.
- Serving the gravy over freshly baked biscuits is traditional and delicious.
- Make sure to stir constantly when adding flour to prevent lumps.
