  1. Preheat the oven and prepare baking sheet: Preheat your oven to 300°F (150°C). Line a baking sheet with parchment paper to prevent sticking.
  2. Separate the eggs: Carefully separate the egg whites from the yolks, placing the whites in a large mixing bowl and the yolks in a separate one.
  3. Mix the yolks with cottage cheese: Add the whole milk cottage cheese or cream cheese to the egg yolks. Whisk together until the mixture is smooth and well combined. If using artificial sweetener, add it here and mix well.
  4. Beat egg whites with cream of tartar: Add the cream of tartar to the egg whites. Using an electric mixer, beat the whites on high speed until stiff peaks form. This means the egg whites should stand straight up when the beaters are lifted.
  5. Fold whites into yolk mixture: Gently fold about a third of the beaten egg whites into the yolk and cheese mixture to lighten it. Then carefully fold in the remaining egg whites until fully incorporated, taking care not to deflate the mixture.
  6. Portion the batter: Using a spoon or scoop, dollop the batter onto the prepared baking sheet in evenly sized mounds, creating cloud-like shapes. Leave space between each to allow for spreading.
  7. Bake the cloud bread: Place the baking sheet in the preheated oven and bake for 25 minutes, or until the cloud bread is golden on top and set.
