Instructions

  1. Prepare Ingredients: Dice Yukon Gold potatoes into evenly sized cubes to ensure even cooking. Slice the smoked Polish sausage into rounds and thinly slice the yellow onion.
  2. Cook Potatoes: Heat 2 tablespoons of olive oil in a large skillet over medium heat. Spread the diced potatoes in a single layer and cook for 12 to 15 minutes, stirring occasionally, until they are golden and crispy. Season with half the salt (½ teaspoon) and half the black pepper (¼ teaspoon) during cooking.
  3. Add Sausage and Onions: Push the cooked potatoes to one side of the skillet and add the remaining 1 tablespoon of olive oil. Add the sliced smoked Polish sausage and onions to the empty side of the skillet. Cook for 8 to 10 minutes until the sausage browns and the onions soften and caramelize.
