- 1 cup plain Greek yogurt
- 1/2 cup creamy peanut butter
- 2 tablespoons honey or maple syrup
- 1/2 teaspoon pure vanilla extract
- 1/8 teaspoon salt
- 1/2 cup mini chocolate chips
- 1 tablespoon coconut oil, melted
Instructions
- Prepare the baking sheet: Line a baking sheet with parchment paper to prevent sticking and make cleanup easier.
- Mix the wet ingredients: In a medium bowl, stir together the Greek yogurt, peanut butter, honey or maple syrup, vanilla extract, and salt until the mixture is smooth and fully combined.
- Fold in chocolate chips: Gently fold in half of the mini chocolate chips into the yogurt mixture to evenly distribute some chocolate throughout.
- Form the bites: Using a small cookie scoop or tablespoon, drop rounded spoonfuls of the mixture onto the prepared baking sheet, spacing them slightly apart. Then gently flatten each mound into a bite-sized round shape.
- Add topping: Sprinkle the remaining mini chocolate chips on top of each bite and lightly press them in to adhere.
- Drizzle with coconut oil: Lightly drizzle the melted coconut oil over the tops of the bites to give them a smoother texture once frozen.
- Freeze: Place the baking sheet in the freezer for 1 to 2 hours, or until the bites are completely firm. Once frozen, transfer the bites to an airtight container and store in the freezer until ready to enjoy.
Notes
- For a sweeter treat, use vanilla-flavored Greek yogurt instead of plain.
- You can substitute almond butter or cashew butter for peanut butter to vary the flavor or accommodate allergies.
- Allow the bites to sit at room temperature for 2 to 3 minutes before eating to achieve the best creamy texture.
