Description

This vibrant Fruit Pizza features a soft, buttery cookie crust topped with a smooth cream cheese frosting and an array of fresh, colorful fruits. Perfect for a refreshing dessert or a festive gathering, this recipe combines a tender baked crust with sweet, tangy cream cheese and a beautiful medley of strawberries, kiwis, mango, blueberries, and grapes.

Ingredients

Scale

Crust

  • 3/4 cup sugar
  • 1 1/4 cups all-purpose flour
  • 1/4 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup butter, softened
  • 1 teaspoon vanilla extract
  • 1 large egg

Cream Cheese Frosting

  • 12 ounces cream cheese, softened
  • 1/4 cup butter, softened
  • 1 teaspoon vanilla extract
  • 1 1/4 cup powdered sugar

Fruit Topping

  • 7-10 strawberries, sliced
  • 5-6 kiwis, sliced
  • 1 mango, sliced
  • 1/2 cup blueberries
  • 1 small bunch of grapes, halved

Instructions

  1. Make the Crust: In a mixing bowl, cream together the softened butter, sugar, egg, and vanilla extract until well combined. Gradually add in the flour, baking powder, and salt, mixing until the dough forms a cohesive ball. Cover and chill the dough in the refrigerator for 30 minutes to firm up.
  2. Bake the Crust: Preheat your oven to 350ยฐF (175ยฐC). Line a baking stone or baking sheet with parchment paper. Roll out the chilled dough into a 1/4 to 1/2 inch thick circle on the parchment, leaving some space around the edges. Bake in the oven for 20-25 minutes, or until the edges are lightly golden. Remove and allow to cool completely.
  3. Prepare the Cream Cheese Frosting: Using an electric mixer, blend the softened cream cheese and butter until smooth and creamy. Add in the powdered sugar and vanilla extract and beat thoroughly until well incorporated and fluffy. Chill briefly if desired to firm up the frosting.
  4. Assemble the Fruit Pizza: Spread the cream cheese frosting evenly over the cooled cookie crust. Arrange the sliced strawberries, kiwis, mango, blueberries, and halved grapes on top in desired patterns or designs. Chill the assembled pizza until ready to serve, allowing the frosting to set.

Notes

  • Chilling the dough before baking helps prevent spreading and yields a firmer crust.
  • Use fresh, ripe fruits for the best flavor and appearance.
  • You can customize the fruit toppings to your preference or seasonal availability.
  • Make sure the cream cheese and butter are softened to achieve a smooth frosting texture.
  • Serve chilled for a refreshing dessert experience.
