Ingredients
Scale
Beef Rollups
- 1 lb ground beef (80/20 preferred)
- 1/2 cup shredded cheddar cheese (or cheddar and mozzarella mix)
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1 tsp Worcestershire sauce
- 1 tsp Dijon mustard (optional)
- 1/2 tsp salt
- 1/4 tsp pepper
- 1/4 tsp paprika (optional)
Garlic Butter Glaze
- 4 tbsp unsalted butter
- 3 cloves garlic, minced
- 1/2 tsp dried parsley (or fresh)
- Salt and pepper to taste
Optional Garnishes
- Sliced pickles
- Fresh lettuce or greens
- Extra shredded cheese for topping
Instructions
- Preheat the oven: Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper for an easy cleanup process.
- Prepare the beef mixture: In a skillet over medium heat, cook the ground beef until it begins to brown. Add the finely chopped onion and minced garlic, cooking together until the beef is fully browned and onions are softened, about 6-7 minutes. Stir in Worcestershire sauce, Dijon mustard if using, paprika, salt, and pepper. Remove from heat and let cool slightly. Then mix in the shredded cheddar cheese, allowing it to melt into the warm beef mixture.
- Form the rollups: Lay out parchment paper or a clean surface. Take a few tablespoons of the beef and cheese mixture and form small flat patties about 3-4 inches in diameter. Carefully roll each patty into a tight cylinder shape like a rollup. Secure with toothpicks if necessary.
- Make the garlic butter glaze: In a small saucepan over medium heat, melt the butter. Add minced garlic and cook for about 1 minute until fragrant. Stir in dried parsley, and season with salt and pepper to taste. Remove the glaze from heat.
- Bake the rollups: Arrange the beef rollups on the prepared baking sheet. Brush each rollup generously with the garlic butter glaze. Bake in the preheated oven for 15-20 minutes until golden brown and fully cooked through.
- Serve: Optionally, top rollups with extra shredded cheese and melt under the broiler for 1-2 minutes. Serve warm with sliced pickles, fresh greens, or your choice of dipping sauce like ranch or ketchup.
Notes
- For extra flavor, add finely chopped bacon or mushrooms to the beef mixture.
- Use lettuce leaves as wraps for an even lower-carb option.
- Try different cheeses such as Swiss, pepper jack, or provolone for varied flavors.
- Add dashes of hot sauce or chopped jalapeños for a spicy twist.
