Description

Grilled Salsa Verde Chicken is a flavorful and zesty dish featuring thinly sliced boneless chicken breasts marinated in a vibrant salsa verde mixture with olive oil, lime juice, cumin, and spices. Grilled to perfection and topped with melted pepper Jack cheese and fresh cilantro, this quick and easy meal is perfect for a healthy weeknight dinner or outdoor barbecue.

Ingredients

Scale

Chicken

  • About 4 boneless chicken breasts, sliced thin (1.5 pounds)

Marinade

  • 12 ounces salsa verde
  • 3 tablespoons olive oil
  • 2 tablespoons lime juice
  • 1 teaspoon black pepper, freshly ground
  • 1 teaspoon cumin
  • Salt, around 1 teaspoon or more to taste

Topping and Garnishes

  • 4 slices pepper Jack cheese
  • Some chopped fresh cilantro (optional, for topping)
  • Lime wedges (optional, for serving)

Instructions

  1. Prepare the marinade: In a large bowl, combine the salsa verde, olive oil, lime juice, cumin, salt, and freshly ground black pepper. Mix well to create a flavorful marinade for the chicken.
  2. Marinate the chicken: Place the thinly sliced chicken breasts into the marinade bowl, tossing them to ensure an even coating. Cover the bowl with plastic wrap and refrigerate for at least 30 minutes, or up to 2 hours for deeper flavor.
  3. Preheat the grill: Heat your grill to medium-high to ensure it’s hot and ready for grilling the chicken.
  4. Grill the chicken: Remove the chicken from the marinade, discarding any leftover liquid. Grill the pieces over medium-high heat, flipping once, for about 4 to 5 minutes on each side. Grill until the internal temperature reaches 165°F to ensure it is fully cooked.
  5. Melt the cheese: With about 1 minute left of grilling time, place a slice of pepper Jack cheese on each piece of chicken. Close the grill lid to allow the cheese to melt and become bubbly.
  6. Rest and serve: Remove chicken from the grill and let rest for a few minutes. Sprinkle with chopped fresh cilantro and serve with lime wedges for squeezing if desired.

Notes

  • Marinate the chicken for up to 2 hours to maximize flavor penetration.
  • Use a meat thermometer to check for doneness; chicken is safe at 165°F internal temperature.
  • Adjust the salt and lime juice according to your taste preferences.
  • Offer lime wedges and cilantro as optional garnishes to freshen the dish before serving.
