Description

This Grilled Thai Chicken recipe features juicy boneless, skinless chicken thighs marinated and seasoned with a flavorful Thai spice blend and a tangy sweet chili glaze. Perfect for a quick and vibrant dinner, the chicken is grilled to perfection, brushed with a zesty glaze, and garnished with fresh cilantro for an authentic Thai-inspired meal.

Ingredients

Scale

Chicken and Seasoning

  • 2 pounds boneless, skinless chicken thighs
  • 1 tablespoon olive oil (or vegetable oil)
  • 3 tablespoons Thai seasoning (see notes below)

Glaze

  • ¼ cup sweet chili sauce
  • 2 tablespoons soy sauce
  • 1 tablespoon lime juice
  • 1 tablespoon sriracha
  • 1 tablespoon fresh cilantro (chopped)

Instructions

  1. Preheat the grill: Preheat a grill to medium-high heat, approximately 400°F, to ensure even cooking and char marks on the chicken.
  2. Season the chicken: Rub the chicken thighs with the olive oil to coat evenly, then sprinkle the Thai seasoning over all sides to impart distinctive Thai flavors.
  3. Prepare the glaze: In a small bowl, whisk together the sweet chili sauce, soy sauce, lime juice, sriracha, and chopped cilantro until well combined; set aside for later use.
  4. Grill the chicken: Place the seasoned chicken thighs on the preheated grill and cook for 5-6 minutes on each side, allowing the chicken to develop grill marks and cook through.
  5. Apply the glaze: In the final 2 minutes of grilling, brush half of the prepared glaze over the chicken thighs to add a glossy, flavorful coating.
  6. Rest the chicken: Remove the chicken from the grill once the internal temperature reaches 160°F, knowing it will rise to 165°F while resting. Brush the remaining glaze on the chicken and let it rest on a cutting board for 5 minutes to retain juices.
  7. Serve: Slice or dice the chicken thighs and serve immediately, optionally garnished with extra fresh cilantro.

Notes

  • The Thai seasoning can be made with a blend of ground coriander, cumin, garlic powder, chili powder, and a pinch of salt and black pepper for authentic flavor.
  • Ensure the internal temperature of the chicken reaches 165°F for safe consumption.
  • This dish pairs well with steamed jasmine rice or a fresh cucumber salad for a complete meal.
  • Adjust the sriracha quantity based on desired spice level.
