Ingredients
Scale
Chicken and Seasoning
- 2 pounds boneless, skinless chicken thighs
- 1 tablespoon olive oil (or vegetable oil)
- 3 tablespoons Thai seasoning (see notes below)
Glaze
- ¼ cup sweet chili sauce
- 2 tablespoons soy sauce
- 1 tablespoon lime juice
- 1 tablespoon sriracha
- 1 tablespoon fresh cilantro (chopped)
Instructions
- Preheat the grill: Preheat a grill to medium-high heat, approximately 400°F, to ensure even cooking and char marks on the chicken.
- Season the chicken: Rub the chicken thighs with the olive oil to coat evenly, then sprinkle the Thai seasoning over all sides to impart distinctive Thai flavors.
- Prepare the glaze: In a small bowl, whisk together the sweet chili sauce, soy sauce, lime juice, sriracha, and chopped cilantro until well combined; set aside for later use.
- Grill the chicken: Place the seasoned chicken thighs on the preheated grill and cook for 5-6 minutes on each side, allowing the chicken to develop grill marks and cook through.
- Apply the glaze: In the final 2 minutes of grilling, brush half of the prepared glaze over the chicken thighs to add a glossy, flavorful coating.
- Rest the chicken: Remove the chicken from the grill once the internal temperature reaches 160°F, knowing it will rise to 165°F while resting. Brush the remaining glaze on the chicken and let it rest on a cutting board for 5 minutes to retain juices.
- Serve: Slice or dice the chicken thighs and serve immediately, optionally garnished with extra fresh cilantro.
Notes
- The Thai seasoning can be made with a blend of ground coriander, cumin, garlic powder, chili powder, and a pinch of salt and black pepper for authentic flavor.
- Ensure the internal temperature of the chicken reaches 165°F for safe consumption.
- This dish pairs well with steamed jasmine rice or a fresh cucumber salad for a complete meal.
- Adjust the sriracha quantity based on desired spice level.
