Ground Turkey Mixture

  • 1 lb ground turkey
  • 1 Tbsp sesame oil (or favorite cooking oil)
  • 2-3 garlic cloves, minced
  • 2 tsp grated ginger
  • ½ tsp smoked paprika
  • ½ tsp onion powder
  • 3 Tbsp low sodium soy sauce
  • 1-2 Tbsp sriracha
  • 2-3 Tbsp chicken broth
  • 2 tsp honey
  • ½ tsp black pepper
  • ½ tsp sea salt (more or less to taste)
  • 2 tsp corn starch

Bang Bang Sauce

  • ½ cup mayonnaise
  • 3 Tbsp sweet chili sauce
  • ½-1 Tbsp sriracha (adjust for spice)
  • 1 tsp rice vinegar
  • 2 tsp honey

To Serve

  • Rice
  • Shredded carrots
  • Sliced cucumbers
  • Shelled edamame
  • Pickled onions
  • Avocado
  • Shredded cabbage
  • Sliced green onion
  • Sesame seeds


Instructions

  1. Prep Bang Bang Sauce: In a small bowl, whisk together mayonnaise, sweet chili sauce, sriracha, rice vinegar, and honey until smooth. Adjust spiciness by adding more sriracha or sweetness with extra honey or sweet chili sauce. Chill the sauce until ready to serve.
  2. Cook Ground Turkey: Heat sesame oil in a large skillet over medium-high heat. Add ground turkey, breaking it into smaller pieces. Cook, stirring occasionally, until the turkey is browned and reaches an internal temperature of 165°F.
  3. Add Seasonings and Simmer: Reduce heat to medium-low and stir in garlic, ginger, smoked paprika, onion powder, soy sauce, sriracha, chicken broth, honey, black pepper, and sea salt. Simmer the mixture for 2-3 minutes while stirring occasionally.
  4. Thicken the Mixture: Sprinkle corn starch over the turkey mixture and stir well to combine. This will slightly thicken the sauce. Optionally, stir in 2 tablespoons of bang bang sauce into the meat mixture just before serving for added flavor.
  5. Assemble Rice Bowls: In serving bowls, arrange cooked rice and your choice of fresh veggies including shredded carrots, sliced cucumbers, shelled edamame, pickled onions, avocado, and shredded cabbage. Spoon the ground turkey mixture on top.
  6. Serve: Drizzle remaining bang bang sauce over the bowls. Garnish with sliced green onions and sesame seeds. Serve immediately and enjoy.
