Description

This Delicious Ground Turkey Sweet Potato Bowl is a nutritious and flavorful meal that combines roasted sweet potatoes with spiced ground turkey and fresh toppings. It’s a balanced dish perfect for a wholesome lunch or dinner, featuring a blend of smoky, tangy, and fresh flavors with guacamole, cheese, and lime juice.

Ingredients

Scale

Roasted Sweet Potatoes

  • 2 large sweet potatoes
  • 1 tablespoon olive oil
  • Salt & black pepper to taste

Ground Turkey

  • 1 pound ground turkey
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon cumin
  • 1/2 teaspoon chili powder
  • Salt & black pepper to taste

Toppings

  • 1/2 cup diced tomatoes
  • 1/4 cup chopped fresh cilantro
  • 1/2 cup crumbled feta or cotija cheese
  • 1/2 cup guacamole
  • 1/2 cup shredded lettuce
  • 1 lime, cut into wedges

Instructions

  1. Preheat and Roast Sweet Potatoes: Preheat your oven to 400°F (200°C). Peel and slice the sweet potatoes into rounds or cubes. Toss them with olive oil, salt, and black pepper, then spread them evenly on a baking sheet. Roast in the oven for 25-30 minutes until they are golden and tender.
  2. Cook Ground Turkey: While the sweet potatoes are roasting, heat a nonstick skillet over medium heat. Add the ground turkey and cook, stirring occasionally, until it is browned and cooked through, about 6-7 minutes.
  3. Season Turkey: Stir in smoked paprika, cumin, chili powder, salt, and black pepper to the cooked turkey. Continue cooking for another 2 minutes until the spices are fragrant and well combined.
  4. Prepare Toppings: Dice the tomatoes, chop the cilantro, crumble the feta or cotija cheese, shred the lettuce, and have your guacamole ready.
  5. Assemble the Bowl: Layer the roasted sweet potatoes in serving bowls. Top with the seasoned ground turkey, followed by shredded lettuce, diced tomatoes, guacamole, crumbled cheese, and chopped cilantro. Finish with a squeeze of fresh lime juice for added brightness.

Notes

  • You can substitute ground turkey with ground chicken or lean ground beef if preferred.
  • For a spicier kick, add a pinch of cayenne pepper to the turkey seasoning.
  • Use dairy-free cheese or skip the cheese for a dairy-free version.
  • Leftovers can be stored in the fridge for up to 3 days and reheated in a skillet or microwave.
