Ground Turkey
- 1 pound ground turkey
- 1 teaspoon smoked paprika
- 1/2 teaspoon cumin
- 1/2 teaspoon chili powder
- Salt & black pepper to taste
Toppings
- 1/2 cup diced tomatoes
- 1/4 cup chopped fresh cilantro
- 1/2 cup crumbled feta or cotija cheese
- 1/2 cup guacamole
- 1/2 cup shredded lettuce
- 1 lime, cut into wedges
Instructions
- Preheat and Roast Sweet Potatoes: Preheat your oven to 400°F (200°C). Peel and slice the sweet potatoes into rounds or cubes. Toss them with olive oil, salt, and black pepper, then spread them evenly on a baking sheet. Roast in the oven for 25-30 minutes until they are golden and tender.
- Cook Ground Turkey: While the sweet potatoes are roasting, heat a nonstick skillet over medium heat. Add the ground turkey and cook, stirring occasionally, until it is browned and cooked through, about 6-7 minutes.
- Season Turkey: Stir in smoked paprika, cumin, chili powder, salt, and black pepper to the cooked turkey. Continue cooking for another 2 minutes until the spices are fragrant and well combined.
- Prepare Toppings: Dice the tomatoes, chop the cilantro, crumble the feta or cotija cheese, shred the lettuce, and have your guacamole ready.
