- 1 tbsp coconut oil (12g) (optional for smoother chocolate)
Instructions
- Prepare the base mixture: Line a baking sheet or large platter with wax or parchment paper to prevent sticking. In a large mixing bowl, stir together the diced strawberries, vanilla Greek yogurt, and honey or maple syrup until the ingredients are fully combined and evenly coated.
- Form clusters: Using a spoon, drop dollops of the strawberry yogurt mixture onto the prepared baking tray. Then gently spread each dollop into a patty-like shape to form clusters.
- Freeze the clusters: Place the tray with clusters in the freezer for at least three hours or preferably overnight, allowing them to freeze solid.
- Melt the chocolate: Carefully melt the chocolate chips either by microwaving in short bursts with stirring between or by using a double boiler method on the stovetop. For a smoother chocolate coating, stir in the optional coconut oil into the melted chocolate until fully combined.
- Coat the clusters: Remove the frozen yogurt clusters from the freezer and dip each one into the melted chocolate to coat thoroughly. Place the coated clusters back onto the lined baking sheet.
- Set the chocolate: Return the coated clusters to the freezer for a few minutes so the chocolate coating can harden and set properly.
- Serve and store: Enjoy the chocolate strawberry yogurt clusters cold directly from the freezer. Store any leftovers in a covered container in the freezer, where they will remain fresh for up to three months.
