Scale
Dip Ingredients
- 1 can artichoke hearts (14 oz)
- 1 cup frozen spinach (60g) or kale (can be omitted)
- 2/3 cup Parmesan cheese (60g) or nutritional yeast
- 1/2 cup Greek yogurt (120g) or dairy-free alternative
- 1/2 tsp salt
- 1/2 tsp garlic powder
Instructions
- Preheat Oven: If baking, preheat your oven to 350° Fahrenheit (177° Celsius) to prepare for warming the dip.
- Prepare Ingredients: Drain the artichoke hearts thoroughly without rinsing. Squeeze excess moisture out of the frozen spinach, then roughly chop both the artichokes and spinach to prepare for mixing.
- Combine Ingredients: Add the chopped artichokes, spinach, Parmesan cheese, Greek yogurt, salt, and garlic powder into a heat-safe bowl, stirring until the mixture is well combined and creamy.
- Heat or Serve: You can enjoy this dip cold immediately, or bake it on the center rack of your preheated oven for about 20 minutes until hot, bubbly, and lightly browned on top. Alternatively, microwave the dip for 5 minutes, stirring halfway through to ensure even heating.
- Serve: Serve the dip hot from the oven or cold alongside toasted baguette slices, crunchy tortilla chips, or a selection of raw vegetables for dipping.
- Store Leftovers: Place any leftover dip into an airtight container and refrigerate. Consume within five days for optimal freshness.
Notes
- Spinach can be substituted with kale or omitted for a milder flavor.
- For a dairy-free or vegan option, use nutritional yeast instead of Parmesan and a dairy-free yogurt alternative.
- Microwaving is a quick alternative if you need the dip heated but do not want to use the oven.
- Ensure to drain the artichokes well to avoid a watery dip.
- This dip pairs wonderfully with toasted baguette, tortilla chips, or fresh vegetable sticks like carrots and cucumbers.
