Description

This Healthy Spinach Artichoke Dip offers a nutritious twist on the classic favorite, combining flavorful artichoke hearts, spinach, Parmesan cheese, and Greek yogurt to create a creamy, delicious appetizer that’s perfect served hot or cold. Ideal for a quick snack or party dip, it can be enjoyed with baguette slices, tortilla chips, or fresh vegetables.

Ingredients

Scale

Ingredients

  • 1 can artichoke hearts (14 oz)
  • 1 cup frozen spinach or kale (60g), can be omitted
  • 2/3 cup Parmesan cheese or nutritional yeast (60g)
  • 1/2 cup Greek yogurt or dairy-free alternative (120g)
  • 1/2 tsp salt
  • 1/2 tsp garlic powder

Instructions

  1. Preheat the oven: If you choose to bake the dip, start by preheating your oven to 350° Fahrenheit (177° Celsius) to ensure it reaches the right temperature for baking.
  2. Prepare the vegetables: Drain the canned artichoke hearts without rinsing them to retain their flavor. Squeeze out any excess moisture from the frozen spinach and roughly chop both the artichokes and spinach to create a uniform texture.
  3. Mix the ingredients: In a heat-safe bowl, combine the chopped artichokes, spinach, Parmesan cheese, Greek yogurt, salt, and garlic powder. Stir thoroughly until all ingredients are well incorporated forming a creamy mixture.
  4. Choose your heating method: You can enjoy the dip cold immediately, or bake it on the center rack of your preheated oven for about 20 minutes until it becomes hot, bubbly, and lightly browned on top. Alternatively, microwave the dip for 5 minutes, stirring halfway through to ensure even heating.
  5. Serve: Once heated to your liking, serve the dip hot alongside toasted baguette slices, tortilla chips, or an assortment of raw vegetables for dipping.
  6. Store leftovers: Place any remaining dip in an airtight container and refrigerate. It will keep safely for up to five days, maintaining its fresh flavor and texture.

Notes

  • You can omit spinach if preferred, but it adds color and nutrients.
  • Substitute nutritional yeast for Parmesan for a dairy-free option.
  • Use dairy-free yogurt to make this dip vegan-friendly.
  • For extra flavor, consider adding a pinch of crushed red pepper or smoked paprika.
  • Ensure spinach is well-drained to avoid watery dip.
  • Serve with a variety of dippers such as crackers, raw vegetables, or pita bread.
