Ingredients
Scale
Cookie Dough
- 1/2 cup softened butter
- 1/3 cup brown sugar
- 1/4 cup granulated sugar
- 1 tbsp vanilla extract
- 1 egg (room temperature)
- 1 & 1/4 cups old-fashioned rolled oats
- 1 cup all-purpose flour
- 1/4 tsp cinnamon
- Pinch of nutmeg
- 1/2 tsp baking soda
- 1/4 tsp salt
Icing
- 3/4 cup powdered sugar
- 1.5 tbsp milk
- 1/4 tsp vanilla extract
Instructions
- Preheat Oven: Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper to prevent sticking and ensure even baking.
- Cream Butter and Sugars: In a mixing bowl, cream together the softened butter, brown sugar, and granulated sugar until the mixture is light and fluffy. This helps create a tender cookie texture.
- Add Wet Ingredients: Mix in the egg and vanilla extract thoroughly until the batter is smooth and well combined.
- Combine Dry Ingredients: Stir in the all-purpose flour, rolled oats, cinnamon, nutmeg, baking soda, and salt until just combined, being careful not to overmix to keep cookies tender.
- Shape Cookies: Using a cookie scoop, drop rounded portions of dough onto the prepared baking sheet. Flatten them slightly to help them spread evenly while baking.
- Bake Cookies: Bake for about 10 minutes or until the cookies are soft but set, avoiding overbaking which can dry them out.
- Cool Cookies: Allow the cookies to cool on the baking sheet for around 20 minutes to firm up, then transfer them to a cooling rack.
- Prepare Icing: Whisk together powdered sugar, milk, and vanilla extract in a small bowl until smooth and drizzly.
- Ice Cookies: Drizzle the icing over the cooled cookies to add a sweet finishing touch before serving.
Notes
- Use room temperature ingredients for better mixing and texture.
- Don’t overbake the cookies; they should be soft when you take them out as they will firm up upon cooling.
- Adjust milk quantity in the icing for desired consistency.
- Store cookies in an airtight container at room temperature up to 3 days.
- Optional: Add raisins or chopped nuts for extra texture and flavor.
