Ingredients
Scale
Dairy and Condiments
- 3/4 cup mayonnaise (preferably Hellmann’s for the best texture)
- 3/4 cup sour cream
- 1/2 cup Parmesan cheese, freshly grated
- 8 oz Monterey Jack cheese (Tillamook recommended for better melt)
Proteins and Vegetables
- 1.25 lb chicken, cut into 1-inch bite-sized cubes
- 8 oz fresh spinach
Spices
- 1/2 tsp black pepper
- 1 tsp garlic salt
- 1/4 tsp onion powder
Instructions
- Preheat the Oven: Preheat your oven to 350°F (175°C) to prepare for baking the casserole.
- Prepare the Chicken: Cut the chicken into 1-inch bite-sized cubes, ensuring even cooking and easy serving.
- Mix the Sauce: In a large mixing bowl, combine the mayonnaise, sour cream, freshly grated Parmesan cheese, pepper, garlic salt, and onion powder. Stir well until all ingredients are fully incorporated to form a creamy sauce.
- Add Chicken and Spinach: Fold the bite-sized chicken pieces and fresh spinach into the creamy sauce mixture, making sure everything is evenly coated.
- Combine with Cheese: Add most of the Monterey Jack cheese to the mixture, reserving some for topping later. Stir gently to distribute the cheese throughout the mixture.
- Assemble the Casserole: Transfer the mixture into a greased casserole dish, spreading it evenly. Sprinkle the remaining Monterey Jack cheese on top for a golden cheesy crust.
- Bake the Casserole: Place the casserole dish in the preheated oven and bake for approximately 25 minutes, until the top is bubbly and lightly browned and the chicken is cooked through.
- Serve Warm: Remove from the oven and let it rest for a few minutes before serving to allow the casserole to set for easy slicing and serving.
Notes
- Using freshly grated Parmesan cheese improves the melting and flavor compared to pre-grated cheese.
- You can substitute fresh spinach with frozen spinach; just make sure to thaw and drain the excess water before mixing.
- To add a crunchy topping, sprinkle breadcrumbs mixed with a little melted butter on top before baking.
- Ensure the chicken is cooked thoroughly by checking that juices run clear and internal temperature reaches 165°F (74°C).
- This casserole can be prepared a day ahead and baked fresh to save time on busy days.
