Description

These Irresistible Savory Breakfast Crepes are thin, tender pancakes perfect for a customizable breakfast. Filled with a delicious mixture of sautéed spinach, melted cheese, and eggs, they are easy to make and can be adapted with various ingredients such as kale, arugula, or different types of cheese. The crepes themselves are smooth and light, making them ideal for rolling around your favorite savory fillings. Enjoy a warm, comforting breakfast that’s both satisfying and versatile.

Ingredients

Scale

Crepe Batter

  • 1 cup Milk (lactose-free options available)
  • 1 cup All-Purpose Flour (alternatives available)
  • 2 large Eggs (or tofu for vegan option)

Filling

  • 1 cup Cheddar Cheese (or Gruyère or mozzarella)
  • 2 cups Spinach (or kale or arugula)
  • 1 cup Tomatoes (diced fresh tomatoes)
  • Olive oil or butter for cooking
  • Salt and pepper to taste (optional)

Instructions

  1. Prepare the Batter. In a mixing bowl, combine the milk, flour, and eggs. Whisk or blend until the mixture is completely smooth to form a thin batter. Allow the batter to rest for about 30 minutes to improve texture and consistency.
  2. Cook the Crepes. Heat a non-stick skillet over medium heat and lightly grease with oil or butter. Pour a ladle of batter into the center of the skillet, swirling the pan gently to evenly coat the surface. Cook for 1 to 2 minutes until the edges lift easily and the bottom is lightly browned. Flip the crepe and cook the other side for an additional minute. Remove and set aside. Repeat with the remaining batter.
  3. Prepare the Filling. In a separate pan, heat olive oil over medium heat. Add the spinach and sauté until just wilted, about 1 to 2 minutes. Add scrambled eggs and cheese, stirring gently until the cheese melts and the mixture is warm, about 3 to 4 minutes. Season with salt and pepper if desired.
  4. Assemble the Crepes. Place one crepe on a plate and spoon the warm filling into the center. Fold the crepe over the filling to enclose it. Garnish with fresh diced tomatoes or herbs, then serve immediately while warm.

Notes

  • For a vegan option, substitute eggs with blended tofu in the batter and use vegan cheese or nutritional yeast in the filling.
  • You can customize the filling with other leafy greens like kale or arugula and cheese varieties like Gruyère or mozzarella.
  • Letting the batter rest is key to tender crepes.
  • Use a non-stick skillet to prevent sticking and achieve an even cook.
  • Serve crepes immediately for best texture; reheat gently if needed.
