Kalimera’s Famous Greek Chicken Gyros is a flavorful and authentic Greek street food recipe featuring marinated chicken thighs grilled or pan-cooked to perfection, served with a tangy yogurt-based sauce, fresh vegetables, and optional thick-cut chips wrapped in warm pita bread. Chicken Marinade
- 1.25 kg / 2.5 lb chicken thighs, skinless boneless
- 1 tbsp sweet paprika (regular paprika, not smoked or spicy)
- 1 tbsp mustard powder (can substitute with Dijon mustard)
- 1 tbsp dried oregano (preferably Greek)
- 1/2 tbsp mild curry powder (not spicy)
- 1 1/2 tsp cooking salt / kosher salt (halve if using table salt, +50% if using flakes)
- 1/2 tsp black pepper
- 1/3 cup extra virgin olive oil
Chips (Optional)
- 400g / 14oz thick-cut frozen chips
- Pinch of table salt (or chicken salt) for seasoning
Sauce
- 1 cup plain yoghurt (preferably Greek or Greek-style)
- 3 tbsp whole-egg mayonnaise (regular mayonnaise can substitute)
- 3 tbsp extra virgin olive oil
- 2 tbsp yellow American mustard (substitute with Dijon mustard, not hot English mustard)
- 2 tsp garlic powder
- 2 tsp sweet paprika
- 1/2 tsp cooking salt / kosher salt
Assembly
- 2 tomatoes, halved and sliced
- 3 cups cos lettuce (romaine), finely sliced (about 5mm / 0.2″)
- 1/2 small red onion, diced (5mm / 0.2″ squares)
- 5 x 20cm / 8″ pita breads (preferably the slightly bready kind)
Instructions
- Marinate chicken: In a large bowl, combine sweet paprika, mustard powder, dried oregano, curry powder, salt, black pepper, and olive oil. Add chicken thighs and coat thoroughly with the marinade. Cover and refrigerate for 24 hours, or at minimum 3 hours, to allow flavors to deeply infuse.
- Prepare sauce: Mix plain yogurt, whole-egg mayonnaise, olive oil, yellow American mustard, garlic powder, sweet paprika, and salt in a bowl. Stir well and set aside in the refrigerator for at least 20 minutes to let the flavors meld.
- Cook chips (optional): If using frozen thick-cut chips, cook them according to your preferred method—baking, frying, or air frying. Kalimera recommends baking for convenience or frying for extra crispiness. After cooking, season with a pinch of salt and keep warm in a 100°C/200°F oven while preparing the chicken.
- Cook the chicken: You have two options:
- BBQ method (recommended): Preheat the BBQ to medium-high heat, preferably using the grill side. No oiling is necessary. Cook chicken thighs for 3-4 minutes per side until deeply golden with slightly charred edges.
- Stovetop method: Heat a large non-stick pan over medium-high heat, no oil needed. Cook the chicken in batches for 3-4 minutes on each side until deeply golden and cooked through (internal temperature of 72°C/162°F). Wipe the pan between batches to remove excess charred bits.
- Rest and slice chicken: Remove chicken from heat and transfer to a tray. Loosely cover with foil and let rest for 3 minutes to retain juices. Slice into 1 cm (0.4 inch) pieces.
- Warm pita breads: Heat pita breads until warm and pliable. For ease, microwave stacked pita breads on high for 45 seconds to 1.5 minutes. Alternatively, brush each side with water and warm in a lightly oiled non-stick pan over medium-high heat for 1 minute per side; avoid crisping to prevent cracking when folding.
- Assemble gyros: Spread 3 tablespoons of the prepared sauce down the center of each warm pita. Layer sliced chicken atop the sauce, then add lettuce and tomato on one side. Sprinkle diced red onion over the chicken, pile on the warm chips (if using), and drizzle more sauce on top. Fold the pita over the filling and optionally wrap in foil to keep everything secure.
- Serve and enjoy: Serve the gyros immediately with extra sauce on the side for dipping. Savor the authentic medley of spices, fresh vegetables, and creamy sauce in every bite.
Notes
- Marinating the chicken for a full 24 hours yields the best flavor, but a minimum of 3 hours is acceptable.
