Scale
Main Ingredients
- 1 whole chicken (about 1.5 kg), cut into pieces
- 8 cups water
- 1 tbsp salt
- 1 tsp black peppercorns
- 3 cloves garlic, crushed
- 1 piece ginger (about 2 cm), sliced
- 200 g rice noodles (soaked in warm water)
- 2 tbsp fish sauce
- 1 tbsp lime juice
- 1 tsp sugar
Garnishes
- 1/4 cup cilantro, chopped
- 1/4 cup green onions, sliced
- 1 lime, cut into wedges
- 1 red chili, sliced (optional)
Instructions
- Prepare the broth: In a large pot, combine the chicken pieces, water, salt, black peppercorns, crushed garlic, and sliced ginger. Bring to a boil over high heat, then reduce the heat to a simmer and cook gently for 20 minutes until the chicken is fully cooked and the broth is infused with flavors.
- Shred the chicken: Carefully remove the chicken from the pot and set aside to cool slightly. Strain the broth through a fine mesh sieve to remove solids, then return the clear broth to the pot to keep warm. Shred the chicken meat into bite-sized pieces, discarding skin and bones.
- Season the broth: Stir the fish sauce, lime juice, and sugar into the hot broth. Taste and adjust seasoning as needed, balancing the saltiness, acidity, and sweetness to your preference.
- Cook the noodles: Prepare the soaked rice noodles according to the package instructions, usually by boiling or soaking until tender. Drain well and divide the noodles evenly among four serving bowls.
- Assemble the soup: Top the noodles with shredded chicken, then ladle the hot, seasoned broth over them.
- Garnish and serve: Garnish each bowl with chopped cilantro, sliced green onions, lime wedges, and red chili slices if desired. Serve the soup hot for a delicious and comforting meal.
Notes
- For a spicier kick, add more fresh chili slices or a splash of chili oil.
- Chicken thighs can be used instead of a whole chicken for quicker cooking.
- Rice noodles vary in thickness; adjust soaking/cooking time accordingly to avoid overcooking.
- Leftover broth can be stored in the refrigerator for up to 2 days or frozen for longer storage.
