Description

These Lazy Girl Pecan Pie Bars are a simple and delicious twist on the classic pecan pie, made easy with a buttery crust and a rich, gooey pecan filling. Perfect for holiday gatherings or any time you want a sweet treat that’s quick to prepare.

Ingredients

Scale

Crust

  • 2 cups all-purpose flour
  • 1 cup unsalted butter (softened)
  • 1/2 cup powdered sugar
  • 1/2 teaspoon salt

Filling

  • 1 1/2 cups brown sugar
  • 1 cup corn syrup
  • 4 large eggs
  • 1 tablespoon vanilla extract
  • 1/2 teaspoon salt
  • 2 cups chopped pecans

Instructions

  1. Preheat Oven: Preheat your oven to 350°F (175°C) and line a 9×13-inch baking pan with parchment paper for easy removal of the bars.
  2. Prepare Crust: In a mixing bowl, combine 2 cups all-purpose flour, 1 cup softened unsalted butter, 1/2 cup powdered sugar, and 1/2 teaspoon salt. Mix the ingredients until the mixture becomes crumbly and forms a dough.
  3. Bake Crust: Press the crumbly dough evenly into the bottom of the prepared baking pan. Bake it in the preheated oven for 20 minutes or until the crust turns lightly golden.
  4. Make Filling: While the crust is baking, whisk together 1 1/2 cups brown sugar, 1 cup corn syrup, 4 large eggs, 1 tablespoon vanilla extract, and 1/2 teaspoon salt in a bowl until smooth and well combined.
  5. Add Pecans: Stir 2 cups of chopped pecans into the filling mixture to evenly distribute the nuts throughout.
  6. Assemble Bars: Once the crust is baked and hot, pour the pecan filling mixture evenly over the crust in the baking pan.
  7. Bake Bars: Return the pan to the oven and bake for an additional 30 to 35 minutes, or until the center of the bars is just set and no longer jiggly.
  8. Cool: Remove the pan from the oven and allow the pecan pie bars to cool completely in the pan to ensure the filling sets properly.
  9. Slice and Serve: Using the parchment paper overhang, lift the bars out of the pan and cut into 24 equal squares for serving.

Notes

  • Make sure to cool the bars completely before slicing to prevent the filling from melting or spilling.
  • You can toast the pecans lightly before adding them for extra flavor.
  • Store bars in an airtight container at room temperature for up to 3 days, or refrigerate for longer freshness.
  • For a gluten-free version, substitute all-purpose flour with a gluten-free flour blend.
