Description

Libby’s Classic Pumpkin Pie is a simple, delicious dessert made with just five ingredients. This traditional pumpkin pie recipe features a smooth, creamy pumpkin filling baked to perfection in a flaky pie crust, perfect for holidays and family gatherings.

Ingredients

Scale

Pie Filling

  • 1 can (15 oz) Libby’s 100% Pure Pumpkin Pie Mix
  • 5 ounces evaporated milk
  • 2 large eggs

Pie Crust

  • 1 unbaked 9-inch deep dish pie shell

Serving

  • Cool whip or whipped topping (optional)

Instructions

  1. Preheat Oven: Preheat your oven to 425°F (220°C) to prepare for baking the pie.
  2. Mix Ingredients: In a large bowl, combine the pumpkin pie mix, evaporated milk, and eggs. Mix thoroughly until the filling is smooth and all ingredients are evenly incorporated.
  3. Pour into Pie Shell: Pour the pumpkin filling into the unbaked 9-inch deep dish pie crust, spreading it evenly.
  4. Bake Initial High Heat: Bake the pie in the preheated oven at 425°F (220°C) for 15 minutes. This helps set the filling.
  5. Reduce Oven Temperature: After 15 minutes, reduce the oven temperature to 350°F (175°C) and continue baking for an additional 40 to 50 minutes, or until a knife inserted near the center comes out clean.
  6. Cool: Remove the pie from the oven and let it cool on a wire rack. Cooling allows the filling to set properly.
  7. Serve: Serve each slice with a dollop of Cool whip or whipped topping if desired.

Notes

  • Use a deep dish pie shell to ensure enough room for the filling.
  • Let the pie cool completely before slicing to avoid a runny filling.
  • Eggs and evaporated milk are essential for the custard-like texture.
  • Optional topping with whipped cream complements the spiced pumpkin flavor.
  • Store leftovers refrigerated and consume within 3-4 days.
