Description

Loaded Fiesta Potato Bowls are a delicious, family-friendly dish featuring crispy roasted potatoes seasoned with bold spices, topped with savory ground beef or black beans, melted cheese, and fresh toppings like sour cream, salsa, and cilantro. Perfect for a festive meal that combines Tex-Mex flavors with comforting roasted potatoes.

Ingredients

Scale

Potatoes and Seasoning

  • 3 medium Russet or Yukon Gold Potatoes, diced into ¾-inch cubes
  • 2 tablespoons Olive Oil or Avocado Oil
  • 2 teaspoons Chili Powder
  • 1 teaspoon Smoked Paprika
  • 1 teaspoon Garlic Powder
  • 1 teaspoon Ground Cumin
  • Salt & Pepper, to taste

Protein

  • 1 lb Ground Beef or Black Beans (use as desired)
  • 1 packet Taco Seasoning (or homemade blend)

Toppings

  • 1 cup Shredded Cheddar or Mexican Blend Cheese
  • ½ cup Sour Cream or Greek Yogurt (vegan option available)
  • ½ cup Salsa (or chipotle mayo for spice)
  • ¼ cup Sliced Green Onions
  • ¼ cup Chopped Cilantro
  • Optional: Diced tomatoes, corn, jalapeños, and olives

Instructions

  1. Preheat the Oven: Set your oven to 425°F (220°C) to prepare for roasting the potatoes.
  2. Prepare the Potatoes: Wash the potatoes thoroughly and dice them into ¾-inch cubes. Leaving the skins on will add extra texture and nutrients.
  3. Season the Potatoes: In a large bowl, toss the diced potatoes with olive oil, chili powder, smoked paprika, garlic powder, ground cumin, salt, and pepper until they are evenly coated.
  4. Roast the Potatoes: Spread the seasoned potatoes in a single layer on a baking sheet. Roast them in the preheated oven for 25-30 minutes, flipping them halfway through to ensure even cooking, until they become golden brown and crispy.
  5. Cook the Protein: While the potatoes are roasting, heat a skillet over medium heat. Cook the ground beef or warm the black beans with the taco seasoning until fully cooked or heated through, stirring occasionally.
  6. Add Cheese to Potatoes: Once the potatoes are out of the oven and still hot, sprinkle the shredded cheddar or Mexican blend cheese over them so it starts to melt.
  7. Assemble the Bowls: Create your loaded fiesta potato bowls by layering the cheesy roasted potatoes with the seasoned protein, a dollop of sour cream or Greek yogurt, salsa, sliced green onions, and chopped cilantro.
  8. Add Optional Toppings: Customize your bowls further with optional toppings such as diced tomatoes, corn, jalapeños, and olives as desired for extra flavor and texture.

Notes

  • You can substitute ground beef with black beans for a vegetarian or vegan option.
  • Leaving potato skins on adds fiber and nutrients; however, you can peel if preferred.
  • Adjust spice levels by varying the amount of chili powder and salsa, or by adding chipotle mayo for smokier heat.
  • For a lower-fat version, use Greek yogurt instead of sour cream and lean ground beef or beans.
  • Serve immediately for the best texture and flavor, as potatoes may lose crispiness upon standing.
