Ingredients
Scale
Filling
- 2 cups Cooked Chicken Breast (Shredded)
- 3 cloves Minced Garlic
- 4 oz Cream Cheese (Softened)
- 1 cup Shredded Mozzarella Cheese (Freshly shredded)
- 1 cup Shredded Cheddar Cheese
- 2 tbsp Fresh Parsley (Chopped)
- to taste Salt
- to taste Pepper
- 1 cup Baby Spinach (Optional)
Wraps and Cooking
- 4 pieces Low-carb Tortillas (Recommended brand: Mission Carb Balance)
- 2 tbsp Olive Oil (For frying)
Instructions
- Preheat skillet: Heat a skillet or grill pan over medium heat and add a drizzle of olive oil to prepare for cooking the wraps.
- Warm tortillas: Microwave the low-carb tortillas for about 10-15 seconds to make them pliable and easier to roll.
- Prepare filling: In a mixing bowl, combine shredded cooked chicken, shredded mozzarella, shredded cheddar, softened cream cheese, minced garlic, chopped parsley, salt, and pepper. Stir until the mixture is well blended.
- Portion filling: Divide the mixture into four equal portions, approximately 1/2 cup per tortilla.
- Assemble wraps: Place each portion onto a warmed tortilla, add baby spinach if using, then roll the tortilla tightly, tucking in the sides as you roll to ensure the filling stays inside.
- Cook wraps: Place each wrap seam-side down in the preheated skillet. Cook for 2-3 minutes on each side until the wrap is golden and the cheese inside has melted.
- Serve: Remove wraps from the skillet, slice in half diagonally, and serve hot for the best taste and texture.
Notes
- Use low-carb tortillas to maintain the low-carb profile of the dish.
- Softening the cream cheese beforehand ensures it blends easily with the other ingredients.
- If desired, add fresh baby spinach inside the wrap for extra nutrients and color.
- Cooking seam-side down first helps seal the wrap and keeps the filling from spilling out.
- Serve immediately after cooking for the best flavor and texture; the cheese is meltiest when hot.
