Potatoes
- 2 lb red potatoes, cut into bite sized pieces (quartered if small, cut into 6ths or 8ths if larger)
- 1-2 garlic cloves, minced
- 2 Tbsp olive oil
- 2 Tbsp grated parmesan
- Salt and pepper to taste
Green Beans
- 1 lb fresh green beans, ends trimmed
- 1 Tbsp olive oil
- 1 garlic clove, minced
- 1 Tbsp parmesan (optional)
- Salt and pepper to taste
Instructions
- Preheat Oven: Set your oven to 425°F to prepare for roasting the ingredients evenly on a sheet pan.
- Prepare Potatoes: On a lined or greased sheet pan, toss together the red potatoes with minced garlic, olive oil, parmesan, salt, and pepper until evenly coated. Spread them out on one-third of the pan and roast in the oven for 10-15 minutes to start browning.
- Prepare Chicken: While the potatoes cook, coat the chicken breasts in a mixture of olive oil, minced garlic, parmesan, breadcrumbs, cracked pepper, and sea salt. Remove the pan with potatoes from the oven and arrange the chicken pieces alongside the potatoes.
- Add Green Beans: Toss the trimmed green beans with olive oil, minced garlic, optional parmesan, and seasoning. Add them to the sheet pan with the chicken and potatoes.
- Bake Until Done: Return the sheet pan to the oven and bake for about 25 minutes or until the chicken reaches an internal temperature of 165°F. For extra crispy potatoes, broil on high for an additional 4-5 minutes if desired.
- Rest and Serve: Remove the sheet pan from the oven and let everything cool for a few minutes before serving to allow flavors to settle. Enjoy your meal!
