Description

This Parmesan Crusted Chicken Sheet Pan Dinner is a delicious and easy-to-make meal featuring tender chicken breasts coated in a crispy parmesan and breadcrumb crust, roasted alongside perfectly seasoned red potatoes and fresh green beans. A one-pan recipe perfect for busy weeknights or casual dinners, delivering a balanced, flavorful meal with minimal clean-up.

Ingredients

Scale

Chicken

  • lb chicken breast (about 3-4 pieces, approx. 1 inch thick)
  • 2 Tbsp olive oil
  • 2 garlic cloves, minced
  • ⅓ cup grated parmesan
  • ⅓ cup breadcrumbs (Italian or plain – can add 1 tsp Italian seasoning to plain breadcrumbs)
  • ½ tsp cracked pepper
  • ½ – ¾ tsp sea salt

Potatoes

  • 2 lb red potatoes, cut into bite sized pieces (quartered if small, cut into 6ths or 8ths if larger)
  • 1-2 garlic cloves, minced
  • 2 Tbsp olive oil
  • 2 Tbsp grated parmesan
  • Salt and pepper to taste

Green Beans

  • 1 lb fresh green beans, ends trimmed
  • 1 Tbsp olive oil
  • 1 garlic clove, minced
  • 1 Tbsp parmesan (optional)
  • Salt and pepper to taste

Instructions

  1. Preheat Oven: Set your oven to 425°F to prepare for roasting the ingredients evenly on a sheet pan.
  2. Prepare Potatoes: On a lined or greased sheet pan, toss together the red potatoes with minced garlic, olive oil, parmesan, salt, and pepper until evenly coated. Spread them out on one-third of the pan and roast in the oven for 10-15 minutes to start browning.
  3. Prepare Chicken: While the potatoes cook, coat the chicken breasts in a mixture of olive oil, minced garlic, parmesan, breadcrumbs, cracked pepper, and sea salt. Remove the pan with potatoes from the oven and arrange the chicken pieces alongside the potatoes.
  4. Add Green Beans: Toss the trimmed green beans with olive oil, minced garlic, optional parmesan, and seasoning. Add them to the sheet pan with the chicken and potatoes.
  5. Bake Until Done: Return the sheet pan to the oven and bake for about 25 minutes or until the chicken reaches an internal temperature of 165°F. For extra crispy potatoes, broil on high for an additional 4-5 minutes if desired.
  6. Rest and Serve: Remove the sheet pan from the oven and let everything cool for a few minutes before serving to allow flavors to settle. Enjoy your meal!

Notes

  • Use parchment paper or spray the sheet pan with cooking oil for easier cleanup.
  • Adjust the amount of salt based on dietary preferences.
  • For crispier potatoes, broiling at the end enhances browning and texture.
  • If using plain breadcrumbs, adding Italian seasoning can boost flavor.
  • Ensure chicken reaches an internal temperature of 165°F for food safety.
  • Optional parmesan on green beans adds extra flavor but can be omitted for dairy-free preferences.
