Instructions
- Preheat Oven and Prepare Baking Sheet: Place the oven rack in the middle position and preheat to 400°F (200°C). Line a large baking sheet with parchment paper and set aside.
- Prepare Puff Pastry: Thaw the puff pastry sheet as per package directions. Roll it into a 10×10 inch square. Carefully transfer it onto the prepared baking sheet.
- Create Puff Pastry Border: Fold one edge of the puff pastry inward by ½ inch, then fold it over another ½ inch to form a tight border. Repeat this folding along all edges to create a raised crust around the tart.
- Add Eggs and Seal Edges: Crack the eggs directly onto the puff pastry within the border, spreading them evenly. Use a pastry brush dipped in the egg whites to brush and seal the edges and corners, ensuring the border stays folded during baking.
- Season and Add Cheese and Bacon: Season the eggs generously with salt and pepper. Sprinkle the grated Colby-Jack cheese evenly over the eggs. Dice the cooked bacon into ½ inch pieces and sprinkle over the cheese layer.
- Bake Until Golden: Bake the tart in the preheated oven for 18 minutes or until the puff pastry edges are golden brown and puffed up. Remove carefully from the oven.
- Garnish and Serve: Sprinkle the freshly chopped chives over the tart. Cut into squares and serve warm for an enjoyable breakfast or brunch treat.
